Truffle Risotto

Truffle Risotto

A bowl of truffle risotto is truly indulgent. Each pearl of Arborio rice is meticulously slow-cooked, releasing its starches to create a silky, sauce enriched with Parmesan cheese and cream. The mushroom stock and the wild mushrooms enhance the mushroom flavor while the grated fresh grated truffles that finish this dish provide adeep, earthy aroma, blooming as they meet the gentle heat of the rice.


Makes 2 servings

1 Tbsp. olive oil
1 Tbsp. minced shallots
1 1/2 tsp. minced garlic
1/2 cup mixed wild mushrooms, sliced
1 cup Arborio rice
1 1/2 cups mushroom broth
2 Tbsp. heavy cream
1/2 cup grated Parmigiano-Reggiano cheese, plus 2 Tbsp. for garnish

Kosher salt and freshly ground black pepper
1 truffle, grated
In a saute pan, heat the olive oil; Saute the shallots, garlic and mushrooms for 1 minute. 
Stir in the rice and saute for 1 minute.
Add the mushroom broth 1/2 cup at a time., stirring constantly until most of the liquid has been absorbed before adding the next 1/2 cup; Repeat until all of the broth has been used and is fully absorbed into the rice, about 20 minutes. 
Stir in the cream, cook for 2-3 minutes. 
Fold in the most of the truffle shavings (reserving a little for garnish)and cheese; Season with salt and pepper. 
Spoon the risotto into a shallow bowl and garnish with truffle shavings, cheese and chives.

Loaded Spicy Sausage Soup

Loaded Spicy Sausage Soup
adapted from Taste of Home December 2011 / January 2012

This hearty, rustic soup offers a robust "rainbow" of flavors and textures, blending heat with fresh garden staples.
This recipes works just as well with sweet Italian sausage or raw turkey or chicken sausage.


Makes 2 meal servings or 4 side servings

1/2 lb. hot Italian sausage links, casings removed
1 cup sliced fresh mushrooms
1 small onion, chopped  
1 medium summer squash or zucchini, sliced, large rounds cut in quarters, small rounds cut in half
1 can (14-1/2 ounces) diced tomatoes
2 cups Homemade chicken broth or canned broth
1 teaspoon dried basil
1/4 teaspoon pepper
Grated Parmesan cheese for serving, optional.

  1. In a large saucepan, cook the sausage, mushrooms and onion about 3 minutes and the yellow squash and continue cooking until the beat until meat is no longer pink, about 3-4 minutes more.
  2. Add the tomatoes, broth, dried basil and pepper; Bring to a boil.
  3. Reduce heat; simmer, uncovered, for 15 minutes. 
  4. Serve passing Parmesan cheese at the table.

The Barefoot Contessa's Beef Bourguignon

Beef bourguignon is the fancy name of a French version of beef stew. When we were in France many years ago, our son ate his way through Paris sampling all the beef bourguignon he could get.
The traditional version is usually made with pearl onions and tougher cuts of meat such as chuck, brisket or shin and usually has to cook for hours. By using the filet, the cook time is significantly reduced because you want the filet to remain tender.


Makes 2 servings                                                                9 WW pts. / serving

1 (1-pound) filet of beef, trimmed
Kosher salt and freshly ground black pepper, for seasoning
1 1/2 Tbsp. olive oil
1 slice center cut bacon, diced
1 garlic clove, grated
3/4 cup dry red wine
1 1/3 cups beef stock
1 1/2 tsp. tomato paste
1 small sprig fresh thyme
1/3 tsp. Kosher salt
1/6 tsp. freshly ground black pepper
2 2/3 oz. onion, chopped
3 carrots, peeled and cut diagonally into 1-inch-thick slices
1 Tbsp. butter at room temperature, divided
2 tsp. Wondra flour™ or all-purpose flour
2 2/3 oz. mushrooms, sliced 1/4-inch thick 


  1. Cut the filet crosswise into 1-inch-thick slices ; Season the filets on both sides with salt and pepper. 
  2. In a small Dutch oven oven, sauté the slices of beef in batches in 1 tablespoons oil until browned on the outside and very rare inside, about 2 to 3 minutes on each side; Remove the fillets from the pan and set aside on a platter.
  3. In the same pan, sauté the bacon on for 5 minutes, until browned and crisp; With a slotted spoon, transfer the bacon to a paper towel to drain and set it aside. 
  4. Drain all the fat, except 2 tsp. from the pan; Add the garlic and cook for 30 seconds.
  5. Deglaze the pan with the red wine and cook on high heat for 1 minute, scraping the bottom of the pan.
  6. Add the beef stock, tomato paste, thyme, 1/3 tsp. salt, and 1/6 tsp. pepper. 
  7. Bring to a boil and cook uncovered on medium heat for 10 minutes. 
  8. Strain the sauce and return it to the pan. 
  9. Add the onions and carrots and simmer uncovered for 20 to 30 minutes, until the sauce is reduced and the vegetables are cooked.
  10. While the vegetables are cooking, sauté the mushrooms separately in 1 tsp. butter and 1 tsp. oil for about 10 minutes, until browned and tender.
  11. With a fork mash 2 tsp. butter into the flour making a paste and whisk it into the sauce. 
  12. Simmer for 2 minutes to thicken.
  13. Cut the filets into bite size pieces and them along with the mushrooms and bacon Dutch oven. Cover and reheat gently for 5 to 10 minutes. Do not overcook. 
  14. Season, to taste with salt and pepper, and serve immediately.

Ham and Cheese Crustless Quiche

This recipe was originally designed to feed a crowd. Since it is just the 2 of us I wanted the flavors without all the leftovers.


Makes 2-4 servings                                                            4-5 WW pts/ serving

4 large eggs
2 Tbsp. + 2 tsp, fat-free milk
2 Tbsp. + 2 tsp, reduced fat sour cream
1/8 tsp. salt
1/2 cup chopped cooked ham
1/4 cup chopped bell pepper
1/4 cup chopped fresh mushrooms
1/4 cup sliced scallions
1/3 cup shredded Cheddar cheese

  1. Preheat the oven to 375F .
  2. Coat a 9-inch pie plate with cooking spray.
  3. Whisk eggs, milk, sour cream, and salt together in a large bowl until well blended. 
  4. Mix ham, bell peppers, mushrooms, scallions and cheese into egg mixture; Pour into the prepared baking dish.
  5. Bake in the preheated oven until a knife inserted into the center comes out clean, about 30 minutes.

These mushrooms ae great with a steam or as a dipper for Pepperoni Pizza Fondue.


1 pint white button mushrooms
  1. Preheat oven to 400F.
  2. Remove the stems from the mushroom. Reserve them for vegetable stock.
  3. Place the mushrooms cap side up in a baking dish.
  4. Roast the mushrooms in the preheated oven for 18-20 minutes, or until they are cooked but still firm.

Garlic Miso Pork Noodle Bowl

Garlic Miso Pork Noodle Bowl

Miso is a traditional Japanese paste made from fermented soybeans and is a rich source of probiotics.
Probiotics improve gut health, boosts immune function, reduces inflammation and supports heart health.


Makes 2 servings                                                            7 WW pts / serving

4 oz. rice noodles, cooked according to package directions
Cooking spray
4 oz. of lean ground pork
1 1/2 Tbsp. grated yellow onion
4 ounces of sliced fresh mushrooms
1 Tbsp. white miso
1/2 tsp. chili garlic sauce
1 cup of beef stock
1/2 cup matchstick carrots
1 1/2 tsp. soy sauce
1/4 cup sliced scallions

  1. In a skillet coated with cooking spray, cook the pork, onion and mushrooms, until the pork is cooked entirely and the mushrooms are tender, about 10 minutes. 
  2. Stir in the miso paste, garlic sauce, beef broth, and carrots; Bring to a boil and cook until the carrots are crisp-tender, about 3 minutes.
  3. Add the cooked noodles and soy sauce; Toss to combine.
  4. Top with the scallions prior to serving.

Spinach & Mushroom Quiche

Spinach & Mushroom Quiche

Gruyère cheese is a hard cheese from Switzerland with has a mild, nutty flavor and creamy texture that melts well. No Gruyère ? Substitute Swiss, Gouda or Cheddar. Just grate any of these cheeses from a block. Preshredded cheese are coated with anti-caking agents like cellulose or potato starch which make them not melt as well.


Makes 3 servings                                                             6 WW points / serving

Cooking spray
4 oz. sliced fresh mixed mushrooms such as cremini, shiitake, button and/or oyster mushrooms
3/4 cups thinly sliced sweet, white or yellow onion
1 1/2 tsp. thinly sliced garlic
2.5 oz. fresh baby spinach (about 4 cups), coarsely chopped
3 large eggs
2 Tbsp. fat free milk
2 Tbsp. light cream
1 1/2 tsp. Dijon mustard
1 1/2 fresh thyme leaves
1/8 tsp. Kosher salt
1/8 tsp. freshly ground black pepper
3/4 cup shredded Gruyère cheese

  1. Preheat oven to 375F. 
  2. Coat a 8-inch pie pan with cooking spray; set aside.
  3. In a skillet coated with cooking spray, cook the mushrooms over medium-high heat, stirring occasionally, until browned and tender, about 8 minutes. 
  4. Add onion and garlic; cook, stirring often, until soft, about 5 minutes. 
  5. Add spinach; cook, tossing constantly, until wilted, 1 to 2 minutes. Remove from heat.
  6. In a medium bowl, whisk eggs, milk, cream, mustard, thyme, salt and pepper; Fold in the mushroom mixture and cheese.
  7. Pour into the prepared pie pan; Bake until set and golden brown, about 30 minutes. 
  8. Let stand for 10 minutes, before serving.

Ranch Chicken Skewers

Ranch Chicken Skewers

This is a simple chicken recipe that can be made ahead of time and cooked quickly at meal time.
These skewers can also be cooked on a grill, cooking for about 5 minutes per side.

Served with Seasoned Rice

Makes 2 servings                                                                0 WW. pts / serving

Cooking spray
12 1-inch cubes boneless, skinless chicken breasts
1 mini red, yellow or orange pepper, cut into 4 long pieces, removing the stem and seeds.
1/4 red onion, cut into 4 chunks
4 baby bella mushrooms, stems removed
2 metal skewers or 2 wooden skewers, soaked for at least 20 minutes

  1. Preheat the broiler.
  2. Coat a metal rack with cooking spray, place on a rimmed baking sheet and set aside.
  3. Toss the chicken cubes with the Hidden Valley™ Ranch Seasoning, Dressing & Dip Mix; Set aside.
  4. Coat the metal skewers with cooking spray.
  5. On each skewer, thread half of the chicken, pepper, onion, and mushrooms in the your preferred order.
  6. Spray each side of the loaded skewers with cooking spray.
  7. Cook in the preheated oven for for 5 to 7 minutes or until the chicken is no longer pink inside. 
  8. Serve immediately.

Farro with Shiitake Mushrooms

Farro with Shiitake Mushrooms

Farro, also known as Italian spelt is nutty and chewy. It is also good for you. According to Dana Angelo White, M.S., R.D., A.T.C."[o]ne cup of cooked farro contains 220 calories, 2 grams of fat, 47 grams of carbohydrate, 5 grams of fiber, and 8 grams of protein. It will also give you a hefty dose of vitamins A, E and minerals like iron and magnesium."


Makes 3 servings                                                               4 WW points / seving

Cooking spray
1/2 small onion, minced
3/4 cup farro
1 thyme sprig
1/2 cups water
3/4 cup Homemade chicken stock or low sodium canned broth  
Kosher salt and freshly ground pepper
1 1/2 Tbsp. butter  
2 1/2 ounces finely diced shiitake mushroom caps (about 1 cup)
Dash of truffle zest  (optional)

  1. In a skillet coated with cooking spray, cook the onion over moderately low heat, stirring frequently, until softened, about 8 minutes. 
  2. Add the farro and thyme and cook, stirring occasionally, until the farro is lightly toasted, about 3 minutes. 
  3. Add the chicken stock and water along with a pinch each of salt and pepper. 
  4. Bring to a simmer, cover and cook over low heat until the water is absorbed and the farro is al dente, about 30 minutes; Discard the thyme.
  5. Meanwhile, melt the butter in a medium skillet. 
  6. Add the mushrooms and cook over moderate heat, stirring frequently, until softened, about 5 minutes. Add the mushrooms to the farro.
  7. Season to taste with salt, pepper and truffle zest, if using, prior to serving.

Jagerschnitzel

Jagerschnitzel

Pork Schnitzel with Mushroom Gravy (Jager Sauce) is one of my husband's favorite foods. It is a crispy breaded pork cutlet with mushroom gravy which is an umami bomb!
When frying I like to use rice flour because it gives a crispier texture. When thickening gravy, I prefer Wondra flour™  which blends in without causing lumps but all purpose flour will work in place of either.



Makes 2 servings                                                            21 WW pts / servinh

2 boneless pork loin chops, pounded thin
1/4 cup rice flour or all purpose flour
1/2 tsp. Kosher salt
1/2 tsp. garlic powder
2 eggs
1 Tbsp. milk
1 cup Panko breadcrumbs
1/2 cup seasoned breadcrumbs
Vegetable oil for frying 
Fresh chopped parsley, for garnish

8 oz. mushrooms, sliced
2 Tbsp. butter
3 garlic cloves, minced
1 Tbsp. onion, minced
2 Tbsp. Wondra flour™ or all purpose flour
1 1/2 cups beef stock
1 Tbsp. stoneground mustard
4 dashes Worcestershire sauce
2 Tbsp. sour cream
Kosher salt and freshly ground black pepper

  1. Start with the mushroom gravy by melting the butter in a medium skillet;  Add the mushrooms saute until beginning to brown, about 5 minutes
  2. Add onion and garlic; Continue cooking for a few more minutes until the onions and garlic are soft and the mushrooms are browned, about another 5 minutes.
  3. Sprinkle flour over the mushroom mixture, stirring to coat; Cook for a few minutes to cook off the raw flour taste.
  4. Add the beef stock, mustard and Worcestershire sauce, stirring constantly, and bring to a simmer to thicken; Set aside and keep warm.
  5. Heat about 1/4 inch of oil in a skillet to 350F.
  6. Set up a 3 step dredging station; in one bowl with combine the flour with the salt and garlic powder; In another bowl add the eggs and milk, whisk to provide; In a third combine the Panko and seasoned breadcrumbs.
  7. Dredge each piece of pork in flour, shake off excess, then dip into the egg mixture, allow excess to drip off, then coat with breadcrumbs, pressing down to assist with adherence..
  8. Fry the pork until golden brown and crispy, about 3 minutes per side.
  9. Transfer schnitzel on a rack over a making sheet to drain.
  10. Check the consistency of the gravy; Adjust consistency as needed by adding more stock or using a cornstarch slurry.
  11. Season with salt and pepper.
  12. Remove from heat and stir in the sour cream.
  13. Serve the pork schnitzel topped with mushroom gravy and garnished with fresh parsley.

Pork, Pepper and Rice Noodle Soup

Pork, Pepper and Rice Noodle Soup

This is a versatile recipe that can be made with beef, chicken or turkey and you can use any colored bell pepper just not the green as they tend to be more bitter.



Makes 2 servings                                                                5 WW pts / serving

2 tsp. olive oil
1.5 oz. mushrooms, stems removed, thinly sliced1 medium carrots (about 1.33 ounces), chopped
2/3 red bell pepper (about 2.33 ounces), finely chopped
2/3 tsp. Kosher salt, divided
Freshly ground black pepper
2/3 cloves garlic, minced
1 tsp. freshly grated ginger
1 scallions, thinly sliced, white and green parts separated
1/3 pound ground pork
2 2/3 cups Homemade chicken stock or canned broth

1 cups thinly sliced napa cabbage
2 tsp. soy sauce
2 tsp. rice vinegar
2 ounces flat rice noodles, cooked
Toasted sesame seeds, sriracha, and additional soy sauce for serving, optional

  1. Heat the olive oil in a pot over medium-high heat until shimmering. 
  2. Add the mushrooms, carrots, bell pepper, 1/3 tsp. salt and a few grinds of pepper and cook, stirring occasionally, until the vegetables are softened, 4 to 5 minutes. 
  3. Add the garlic, ginger and scallion whites and cook, stirring, until softened, 2 to 3 minutes. 
  4. Add the pork, 1/3 tsp. salt and a few grinds of pepper and cook, breaking up the pork until no longer pink, about 5 - 6 minutes.
  5. Pour in the chicken broth and bring to a boil. 
  6. Add the cabbage and cook until it is tender but still holds a bit of crunch, about 6 minutes. 
  7. Stir in the soy sauce and vinegar; Stir to combine. 
  8. Season to taste with salt and pepper.
  9. Dice the cooked noodles between 2 bowls; Ladle the soup into bowls.
  10. Sprinkle with the scallion greens and top with some sesame seeds and sriracha if desired prior to serving.

Italian Meatloaf with Mushroom Sauce

Italian Meatloaf with Mushroom Sauce

Making a panade (mixture of breadcrumbs and milk) prevents the meatloaf from being dry. To remove the drippings from the meatloaf while it is resting I used a turkey baster.

Makes 4 servings                                                    4 WW points / serving                                          
1/4 cup milk
1/2 cup stale breadcrumbs (about 2-3 slices) or purchased bread crumbs
1 lb. ground beef
2 Tbsp. parsley, minced
1 clove garlic, grated
1 large egg
1/2 cup Parmesan cheese
1 tsp. Kosher salt, divided
1/4 tsp. freshly ground black pepper
2 Tbsp. dry red wine
1 14 oz can whole cherry tomatoes, hand crushed
1/2 lb. mushrooms, sliced
1/2 onion, sliced
2 Tbsp. of drippings from the cooked meatloaf 
Kosher salt and freshly ground black pepper, to taste

  1. Preheat the oven to 400F.
  2. Make a panade by combining the milk with the breadcrumbs.
  3. Mix the beef, parsley, garlic, egg, cheese, 1/2 tsp salt and pepper into the panade, gently.
  4. Divide meat mixture evenly between 2 mini loaf pan (5" x 3" x 3")
  5. Pour the wine and tomatoes over the meatloaves; season with 1/2 tsp salt.
  6. Bake for 50-60 minutes or until it reaches an internal temperature of 160F in the center; Let rest 15 minutes before taking it out of the pan so it will not fall apart.
  7. Meanwhile cook the mushrooms in 1 Tbsp. of drippings from the meatloaf over medium heat until well browned.
  8. In the same pan heat the remaining Tbsp of meatloaf drippings and cook the onions until soft and translucent, about 5 minutes; season to taste with salt and pepper
  9. When the meatloaf is cooked remove from the oven and let rest 15 minutes.
  10. To serve slice the meatloaf and top with the onions and mushrooms.

Vegetable Stir Fry with Garlic Miso Sauce

You can use an vegetables you have on hand. I used snow peas, onion, bell pepper, and mushrooms but zucchini, eggplant, broccoli, cauliflower, green beans, and bean sprouts would also work nicely.




Makes 2 servings                                                              2 WW points / serving

1 Tbsp olive oil
3 cloves garlic, chopped
1 1/2 tsp. yellow miso
1/2 tsp. oyster sauce
1/2 tsp. Sriracha
1/4 tsp. sugar substitute
1 1/2 tsp. water
1/2 lb. assorted vegetables
1/2 jalapeno pepper, seeded and thinly sliced
Penzeys Szechuan salt or Kosher salt and white pepper
  1. In a small bowl combine the miso, oyster sauce sugar substitute and water; set aside
  2. In a hot skillet, sauté the garlic in the oil until fragrant, about 1 minutes.
  3. Add the mushrooms and sauté until their are beginning to brown, about 4 minutes.
  4. Add the onions, bell pepper and jalapeno and continue cooking until they begin to soften, about 4 minutes.
  5. Add the snow peas and cook until tender, about 1 minutes.
  6. Pour in the miso mixture and toss to combine; Cook another 1-2 minutes to heat through.
  7. Season to taste with Szechuan salt

Dumpling Soup with Vegetables

Dumpling Soup with Vegetables

Wonton soup is one of my favorites. Amping it up with a bunch of vegetables just makes it better.


Makes 4 servings                                                        2 WW pp / serving

2 cups homemade chicken stock or low sodium chicken broth
1 Tbsp. dry sherry 
1/2 tsp. sugar substitute
1/2 -inch piece ginger, peeled and thinly sliced
2 3-inch strips orange zest
Kosher salt and freshly ground pepper
1 scallions, sliced, white and green parts separated
1/2 cup sliced button mushrooms
1 medium carrots, thinly sliced
1/2 cup cabbage leaves, thinly sliced
8 frozen chicken dumplings
Soy sauce, for drizzling (optional)

  1. Combine 1 cup water, stock, sherry, sugar, ginger, orange zest, salt, and pepper to taste in a pot. 
  2. Cover and bring to a boil over high heat. 
  3. Add the scallion whites, mushrooms and carrots. 
  4. Simmer, uncovered, until the carrots are crisp-tender, about 4 minutes.
  5. Add the cabbage, dumplings and scallion greens. 
  6. Cover and cook until the dumplings are soft and heated through, 4 to 5 minutes. 
  7. Divide the dumplings and soup among bowls. 
  8. Drizzle with soy sauce, if desired.

Zucchini Hash with Fried Eggs

Zucchini Hash with Fried Eggs

A low carb version of hash to accompany your eggs. You might still miss the potatoes but this is a good alternative.

Makes 2 servings                                                        0 WW pp / serving

Cooking spray
1/2 onion, diced
1 tsp. chopped fresh sage or 1/3 tsp. dried
1 clove garlic, minced
1/2 jalapeno, seeded and minced
1 medium zucchini, diced
Kosher salt and freshly ground black pepper
1/4 cup roasted peppers, chopped
1 Tbsp. chopped fresh parsley
2-4 fried eggs

  1. In a pan coated with cooking spray, cook the onion until soft, about 5 minutes.
  2. Add the sage, garlic and jalapenos and cook until fragrant, about 30 seconds.
  3. Add the zucchini and salt & pepper to taste; Cover and cook until the zucchini begins to soften, about 7 minutes.
  4. Uncover; add the roasted peppers and cook until the zucchini is soft and light brown, about 6 more minutes.
  5. Make sure the hash is in an even layer and cook undisturbed for another 4 minutes to brown the bottom.
  6. Serve the hash topped with the fried eggs.

Juicy Turkey Cheeseburgers with Colby Jack Cheese

As I have been trying to reduce carbs, I have taken a liking to bun-less burgers. You can add a hamburger bun to yours if you prefer, just don't forget to add the points.


Makes 5 Servings                                                     4 WW Blue points / serving

Ingredients
2/3 cup finely chopped onion
1 1/2 tsp. minced garlic
2 Tbsp. ketchup
1 Tbsp. soy sauce
1/4 tsp. dried mustard
1/4 teaspoon pepper
20 oz. ground turkey breast
5 slices sliced Colby Jack cheese
5 center-cut bacon strips, cooked
5 lettuce leaves
5 tomato slices


Sautéed mushrooms

  1. Mix together the onion, garlic, ketchup, soy sauce, mustard, pepper and turkey in a bowl..
  2. Form into 5 patties.
  3. Cook burgers over in a skillet coated with cooking spray for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear.
  4. Top with cheese; cover and cook 30 seconds longer or until cheese is melted. 
  5. Serve on top of lettuce and topped with bacon, tomato, onions and mushrooms.

Sautéed Mushrooms

There is nothing better on a steak than sautéed mushrooms. The have a complex taste but are very easy to make.



Makes 4 servings                                                    0 WW Blue points / servings

3/4 lb. mushrooms, sliced

1/2 tsp. Kosher salt

2 Tbsp. dry red wine


  1. In a pan coated with cooking spray, cook the mushrooms, sprinkled with salt until they are beginning to brown, about 5 minutes.
  2. Add the wine and continue cooking until the wine has been absorbed and the mushrooms are cooked through, about 2 more minutes.
  3. Serve with your favorite steak, burger or chicken dish.

Mixed Vegetable Crustless Quiche

Mixed Vegetable Crustless Quiche

By filling a quiche with a bunch of vegetables you can get a filling breakfast for minimal points.

Can't find a Swiss & Gruyere cheese blend. Use your favorite shredded cheese, just check the points since it varies among types.

Makes 6 servings                                                        1 WW Blue point / serving

1/2 lb. fresh mushrooms, sliced

1/4 cup chopped bell pepper

4 scallions, chopped

1 Tbsp. diced pimentos, drained and rinsed

1 1/2 slices Canadian bacon, chopped

6 large eggs

3/4 cup fat free skim milk

1/2 tsp. dried thyme

1/2 tsp. seasoned salt

1/4 tsp. ground mustard

Pinch of dill weed

1/2 cup shredded Swiss & Gruyere cheese blend

  1. Preheat the oven to 350F.
  2. In a skillet coated with cooking spray, sauté the mushrooms, pepper and scallions until tender.
  3. Add the pimentos and Canadian bacon and cook another minute.
  4. In a bowl, whisk the eggs, milk, thyme, seasoned salt, mustard and dill until well combined.
  5. Pour the egg mixture into a pie pan coated with cooking spray.
  6. Add the vegetable mixture and half of the cheese to the pie pan.
  7. Bake in the preheated oven for 35 minutes.
  8. Sprinkle with the remaining cheese and bake another 5-10 minutes or until a cake tester comes out clean when put into the center.
  9. Let stand for 10 minutes before serving.

Spinach & Mushroom Scrambled Eggs

Spinach & Mushroom Scrambled Eggs

This savory egg dish is low fat and filling.


Makes 1 serving                                                        1 WW Blue point / serving

2 large eggs

2 Tbsp. fat free milk

1/8 tsp. Kosher salt

1/8 tsp. freshly ground black pepper

2 tsp. Chile-Garlic Oil (optional)

1 cup sliced mushrooms

1 cup spinach leaves, chopped

2 scallions, chopped

1 Tbsp. fat free cheddar cheese


  1. In a pan coated with cooking spray, add the mushrooms and the chile-garlic oil; cook until almost cooked through, about 5 minutes.
  2. Add the scallions and spinach and sauté until the mushrooms and spinach are cooked through, about 3 minutes.
  3. Transfer the mushroom mixture to a bowl and set aside.
  4. Wipe out the pan and re-coat with cooking spray.
  5. Whisk the eggs with the milk, salt and pepper.
  6. Add the eggs to the pan and cook to desired doneness.
  7. Return the mushroom mixture to the pan along with the cheese.
  8. Cook until heated through and the cheese is melted.

Chicken & Mushroom Marsala Bowls

Chicken & Mushroom Marsala Bowls

This health-ified version of the classic chicken marsala has a lot of veggies and is served over quinoa instead of pasta.

If you do not have kale on hand, baby spinach makes a good substitute.

Any mushrooms you have on hand will substitute nicely for the gourmet mix - I just got them as part of my Misfits Box


Makes 2 servings                                                     5 WW Blue points / serving

Cooking spray

1/4 uncooked quinoa

2/3 cup + 1/4 cup homemade chicken stock or canned broth, separated

3 oz. kale, torn

4 oz. gourmet mix mushrooms, sliced

8 oz. boneless, skinless chicken breasts cut into bite-sized pieces

1/4 cup minced shallots

1 1/2 Tbsp. chopped fresh thyme or 1/2 tsp. dried

4 garlic cloves, minced

1/2 cup dry Marsala wine

1 tsp. Dijon mustard

1 tsp. Dijon mustard

1 1/2 Tbsp. Parkay cooking oil spray

Kosher salt & freshly ground black pepper

  1. Coat a small pot with cooking spray and sauté the quinoa until it is toasted and fragrant, about 3 minutes.
  2. Add 1/3 cup stock to the pan; bring to a boil; cover and simmer for 12 minutes
  3. Remove from heat, let sit for 10 minutes; season to taste with Kosher salt; set aside.
  4. Coat a large skillet with cooking spray, add the kale and sauté until wilted and tender, about 3 minutes remove from the pan set aside * and keep warm. 
  5. Add more cooking spray to the pan, add the mushrooms and  cook until browned, about 8 minutes, remove from the pan; add to the kale and keep warm.
  6. Coat the pan once again with cooking spray, add the chicken and sauté 4 minutes or until browned on all sides.
  7. Add the shallots, thyme and garlic; sauté 1 1/2 minutes, or until the vegetables are soft and the chicken is cooked through.
  8. Add the Marsala and 1/4 cup stock and deglaze the pan by scraping up browned bits from the bottom. Cook 2 minutes or until the liquid has reduced to about 1/4 cup and is slightly syrupy.
  9. Remove from the heat. Add the Parkay, mustard and salt and pepper to taste.; Stir to combine.
  10. Add the mushrooms and kale to the chicken; Serve over the quinoa.

* If the kale starts to stick to the pan before it is wilted, add a little water, a Tbsp. at a time.
