Ham and Cheese Crustless Quiche
adapted from Allrecipes
This recipe was originally designed to feed a crowd. Since it is just the 2 of us I wanted the flavors without all the leftovers.
4 large eggs
2 Tbsp. + 2 tsp, fat-free milk
2 Tbsp. + 2 tsp, reduced fat sour cream
1/8 tsp. salt
1/2 cup chopped cooked ham
1/4 cup chopped bell pepper
1/4 cup chopped fresh mushrooms
1/4 cup sliced scallions
1/3 cup shredded Cheddar cheese
2 Tbsp. + 2 tsp, fat-free milk
2 Tbsp. + 2 tsp, reduced fat sour cream
1/8 tsp. salt
1/2 cup chopped cooked ham
1/4 cup chopped bell pepper
1/4 cup chopped fresh mushrooms
1/4 cup sliced scallions
1/3 cup shredded Cheddar cheese
- Preheat the oven to 375F .
- Coat a 9-inch pie plate with cooking spray.
- Whisk eggs, milk, sour cream, and salt together in a large bowl until well blended.
- Mix ham, bell peppers, mushrooms, scallions and cheese into egg mixture; Pour into the prepared baking dish.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 30 minutes.
