Sausage Stuffed Acorn Squash

Another combination of my husband's favorite foods .......roasted acorn squash and sausages. 
Sausage Stuffed Acorn Squash
1 acorn squash, halved and seeded
3 Italian sausage links, cooked 

1/2 medium onion, chopped
1/2 large apple, chopped
2 cups chopped fresh spinach 
1/4 cup chopped pecans
1 egg
2 tablespoons milk
Preheat the oven to 400F.  Cook the squash cut side down on a foil lined rimmed baking sheet for 30 minutes or until cooked through.
Coat a skillet with cooking spray. Add the onion until soft but not browned. Add the apple and kale.and cooked sausage. Heat through.
In a large bowl, beat the egg with the milk.  Add the pecans and the sausage mixture.
Turn the cooked squash, hollow-side-up.  Fill each squash with the stuffing and bake at 400 degrees for 20 minutes.
