Garlic Miso Pork Noodle Bowl

Miso is a traditional Japanese paste made from fermented soybeans and is a rich source of probiotics.
Probiotics improve gut health, boosts immune function, reduces inflammation and supports heart health.
4 oz. rice noodles, cooked according to package directions
Cooking spray
4 oz. of lean ground pork
1 1/2 Tbsp. grated yellow onion
4 ounces of sliced fresh mushrooms
1 Tbsp. white miso
1/2 tsp. chili garlic sauce
1 cup of beef stock
1/2 cup matchstick carrots
1 1/2 tsp. soy sauce
1/4 cup sliced scallions
4 oz. of lean ground pork
1 1/2 Tbsp. grated yellow onion
4 ounces of sliced fresh mushrooms
1 Tbsp. white miso
1/2 tsp. chili garlic sauce
1 cup of beef stock
1/2 cup matchstick carrots
1 1/2 tsp. soy sauce
1/4 cup sliced scallions
- In a skillet coated with cooking spray, cook the pork, onion and mushrooms, until the pork is cooked entirely and the mushrooms are tender, about 10 minutes.
- Stir in the miso paste, garlic sauce, beef broth, and carrots; Bring to a boil and cook until the carrots are crisp-tender, about 3 minutes.
- Add the cooked noodles and soy sauce; Toss to combine.
- Top with the scallions prior to serving.
