Scrambled Eggs with Prosciutto, Shrimp & Mushrooms

Scrambled Eggs with Prosciutto, Shrimp & Mushrooms

adapted from Bon Appetit December 1997

If you do not have any leftover poached shrimp. Add raw chopped shrimp after the eggs cook for about 2 minutes. Continue cooking for another 3-4 minutes before adding the prosciutto.


Makes 2 servings                                                    0 WW Blue points / serving

Cooking spray

1/4 lb. fresh mushrooms

2 scallions, white part only, chopped

4 oz. poached shrimp, chopped large

4 large eggs

2 Tbsp. fat free milk

2 slices lean prosciutto, chopped

1 ounce smoked salmon, cut into strips (optional)

1 tsp. chopped parsley (optional)

  1. In a small frying pan coated in cooking spray, saute the mushrooms and scallions until tender, about 10 minutes.
  2. Whish the eggs with the milk.
  3. In a medium skillet coated with cooking spray, slowly cook the eggs until beginning to set about 4 minutes.
  4. Add the shrimp and prosciutto; continue to cook to desired consistency and the shrimp and prosciutto are heated through.
  5. Serve on plate surrounded by mushrooms and topped with slices of smoked salmon and chopped parsley if using.

Scrambled Eggs with Smoked Salmon & Scallions

Scrambled Eggs with Smoked Salmon & Scallions

adapted from A Food Network sponsored Kohl's advertisement 

I love bagels with cream cheese, smoked salmon and red onion. This gives you a similar taste but without the bagel.


Makes 2 servings                                                1 WW Blue point / serving

4 eggs

2 Tbsp. fat free milk

Kosher salt

Cooking spray

1 Tbsp. light cream cheese, room temperature, cut into small cubes

1 Tbsp. chopped scallions

1 oz. smoked salmon, cut into 1/2 inch pieces

1 Tbsp. minced red onions

1/3 tsp. everything bagel seasoning


  1. Whisk the eggs with the milk and a pinch of kosher salt.
  2. In a frying pan coated with cooking spray, cook the egg mixture until it is beginning to set but still very wet, about 3-4 minutes.
  3. Fold in the scallions and cream cheese and cook until the eggs are completely set, about 1-2 more minutes.
  4. Divide the eggs between two bowls, top with smoked salmon and red onion 
  5. Sprinkle with everything bagel seasoning and serve.

Smoked Salmon Cucumber Bites

Smoked Salmon Cucumber Bites

These appetizers are quick and easy to make but look very elegant.


Makes 14 bites                                        0 WW Blue points / bite

1/4 large English cucumber (about 14 slices)

1 Tbsp. fat free sour cream

3/4 tsp chopped fresh dill, plus more for garnish

1/4 lemon, zested

1/4 tsp. Kosher salt

1 ounce smoked salmon, cut into 1 1/2 in pieces

1 tsp Everything Bagel Seasoning


In a small bowl, combine the sour cream, dill, lemon zest and salt. Stir to combine.

Place the cucumber rounds on a platter and top with a scant 1/2 tsp. of the sour cream mix.

Fold or ripple the smoked salmon and place on top of the sour cream.

Sprinkle with the Everything Bagel Seasoning. garnish with dill and serve.

 Smoked Salmon & Cream Cheese English Muffins

Serves 1        5 Blue WW points

You can reduce the points by using a light English Muffin which would be -2 Blue WW points or Non-Fat yogurt cheese -1 Blue WW Points

1 English Muffin

1 1/2 Tbsp low fat cream cheese

1 1/2 ounces smoked salmon

onion

capers

Toast the English Muffin. Top with cream cheese, smoked salmon, onions and capers
