Truffle Risotto

Truffle Risotto

A bowl of truffle risotto is truly indulgent. Each pearl of Arborio rice is meticulously slow-cooked, releasing its starches to create a silky, sauce enriched with Parmesan cheese and cream. The mushroom stock and the wild mushrooms enhance the mushroom flavor while the grated fresh grated truffles that finish this dish provide adeep, earthy aroma, blooming as they meet the gentle heat of the rice.


Makes 2 servings

1 Tbsp. olive oil
1 Tbsp. minced shallots
1 1/2 tsp. minced garlic
1/2 cup mixed wild mushrooms, sliced
1 cup Arborio rice
1 1/2 cups mushroom broth
2 Tbsp. heavy cream
1/2 cup grated Parmigiano-Reggiano cheese, plus 2 Tbsp. for garnish

Kosher salt and freshly ground black pepper
1 truffle, grated
In a saute pan, heat the olive oil; Saute the shallots, garlic and mushrooms for 1 minute. 
Stir in the rice and saute for 1 minute.
Add the mushroom broth 1/2 cup at a time., stirring constantly until most of the liquid has been absorbed before adding the next 1/2 cup; Repeat until all of the broth has been used and is fully absorbed into the rice, about 20 minutes. 
Stir in the cream, cook for 2-3 minutes. 
Fold in the most of the truffle shavings (reserving a little for garnish)and cheese; Season with salt and pepper. 
Spoon the risotto into a shallow bowl and garnish with truffle shavings, cheese and chives.

Easy Creamed Spinach

Easy Creamed Spinach

This sophisticated take on creamed spinach transforms a classic steakhouse side into a gourmet experience. Vibrant, blanched spinach leaves are folded into a velvety reduction of heavy cream, balanced by the savory warmth of minced garlic. The flavor profile is elevated by a the cognac which adds a deep, oaky richness and the anisette introduces a subtle, aromatic hint of licorice that cuts through the cream's density. The final dusting of freshly grated nutmeg provides an essential warm finish that rounds out the earthy greens.


Makes 2 servings

1/2 cup Homemade chicken stock or canned broth
3.4 of an 8-ounce bag baby spinach
1 Tbsp. butter
1/2 large shallot, minced
1 medium garlic clove, finely grated
1/3 tsp. dried thyme
1 1/2 tsp. cognac
3/4 tsp. annisette
1/4 cup heavy cream
pinch of freshly grated nutmeg
Kosher salt & white pepper

  1. In a pot, bring the chicken stock to a boil; Add the spinach, cover and cook for 1 minute. 
  2. Toss the spinach with tongs, cover and cook for 1 minute longer, until just wilted. 
  3. Drain the spinach and let cool.
  4. Place the spinach in a kitchen towel and squeeze out as much liquid as possible.
  5. In a a high sided pan, cook the butter, shallots, garlic and time over medium heat, stirring occasionally, until soft and translucent but not browned, about 5 minutes. 
  6. Remove the pot from the heat and add the cognac and annisette. 
  7. Remove the pan from the heat and ignite the alcohol with a long match, then return to the heat. 
  8. Stir in the drained spinach and cream. 
  9. Bring to a boil and cook, stirring, until thickened, about 2 minutes. 
  10. Season with a nutmeg, salt and white pepper.

Ratatouille Shepherd's Pie

Ratatouille Shepherd's Pie

This is a vegetarian version of the hearty, usually meaty Shepard's pie. The ratatouille is made with eggplant, zucchini, summer squash and tomatoes and then covered with rich mashed potatoes to make a filling meal.
You can lighten the meal (and point amount) by using skim milk to make the mashed potatoes and lessen the amount of butter.


Makes 2 servings                                                                11 WW pts / serving

about 1/2 lb. russet potatoes, peeled and cut into 1 inch pieces
1 Tbsp. heavy cream
pinch of ground white pepper
2 1/2 Tbsp. butter, divided
1 tsp. Kosher salt, divided, plus more to taste
1 large egg yolks
1 1/2 tsp. olive oil
1/2 cup chopped onion, red or yellow
1 Tbsp. minced garlic, about 1-2 cloves
1/4 large eggplant, cut into 1/2-inch pieces (about 1 cups)
1/2 medium summer squash, cut into 1/2-inch pieces (about 1 cups)
1/2 medium zucchini, cut into 1/2-inch pieces (about 1 cups)
1/2 tsp. Italian seasoning
2 Tbsp. (1 ounces) dry white wine
1/2 cup + 2 Tbsp. can diced tomatoes, drained
3/4 tsp. balsamic vinegar
few grinds of freshly black pepper, plus more for garnish

  1. Place potatoes in a pot with enough water to cover. 
  2. Bring the pot to a boil over high; reduce heat to medium, and cook until potatoes are cooked through, about 20 minutes. Drain potatoes, and let cool slightly.
  3. Meanwhile, heat cream, white pepper, and butter in a small saucepan over medium-low heat until butter is melted, 1 to 2 minutes; set aside.
  4. Put the potatoes through a ricer into a bowl; Add the cream mixture and 1/4 tsp. salt; Stir to combine.
  5. Set aside until potatoes are just warm to the touch, about 5 minutes. 
  6. Stir in egg yolks, and whisk until incorporated. Set aside at room temperature.
  7. Preheat oven to 400°F. 
  8. Cook the onions, garlic, and 1/4 tsp. salt in the oil in a high sided skillet;stirring often, until onion is softened, about 2 minutes. 
  9. Add the eggplant; cook, stirring occasionally, until eggplant is browned in spots, about 5 minutes.
  10. Stir in yellow squash, zucchini, Italian seasoning and remaining 1/4 teaspoon salt; cook, stirring occasionally, until vegetables begin to soften, about 6 minutes.
  11. Increase heat to medium-high. Add wine; Cook, stirring and scraping up any browned bits from bottom of skillet, until most of the liquid is evaporated, about 3 minutes. 
  12. Add the tomatoes, vinegar, and black pepper; cook, stirring often, until vegetables are well coated, about 2 minutes; Divide the vegetable mixture between 2 oven safe containers.
  13. Top vegetable mixture evenly with mashed potatoes; drag a fork through potatoes to create a swooped pattern, if desired. 
  14. Bake until heated through and potatoes are browned in spots, about 35 minutes. 
  15. Garnish with additional black pepper, and serve.

Blackened Chicken with Tomato Parmesan Cream Sauce

This quick recipe is a one pan plan.The blackened seasoning is bold, smoky blackened spice blend. If you have a favorite store bought blackening seasoning go ahead and use that. The chicken can be eaten as the main course or put into sandwiches, on top of nachos / salads or in quesadillas.



Makes 2 servings

2 Chicken breasts, boneless, skin-on
1 tbsp Olive Oil

Blackening Seasoning
1 Tbsp paprika
1 1/2 tsp. garlic powder
1 1/2 tsp. onion powder
1 1/2 tsp. dried thyme
1 1/2 tsp. dried oregano
1 tsp freshly ground black pepper
1/2 tsp Kosher salt
1/2 tsp cayenne pepper

Tomato Parmesan Cream Sauce
2 Tbsp. sun-dried tomatoes removed from the oil and chopped
2 cloves garlic, minced
1/4 tsp. red pepper flakes 
1/4 tsp. Italian seasoning
1/2 cup Homemade chicken stock or canned broth
1/2 cup heavy cream
1/4 cup Parmesan cheese, shredded
Kosher salt & Freshly ground pepper
Fresh basil garnish (optional)


  1. Preheat the oven to 375 F.
  2. In a small bowl, mix together the paprika, garlic powder, onion powder, thyme, oregano salt, black pepper and cayenne to create the blackened seasoning.
  3. Pat the chicken dry with a paper towel then and set it aside.
  4. In a preheated skillet, add oil and let it preheat in the pan (do not let it get too hot so that it starts smoking). 
  5. Place each chicken into the skillet skin side down and let it cook for 3 minutes or until it easily lifts from the pan and can be flipped.
  6. Once you flip each chicken breast, turn off the stove and carefully transfer the pan into the oven to finish cooking for about 15 minutes or it reaches an internal temperature of 165 F.
  7. Remove from the oven and remove the transfer the chicken to a plate.
  8. Cover loosely with aluminum foil and let it rest for 5 minutes before slicing. 
  9. Place the skillet back onto the heat and leave any drippings and seasoning in the pan.
  10. Over medium-low heat, add in the chopped sun-dried tomatoes, garlic, red pepper flakes, and Italian seasoning; Sauté a few minutes to develop the aromatic flavors in the spices.
  11. Add the chicken stock and cream; Continue to whisk over the heat for a few minutes to bring it up to temperature. Do not boil !
  12. Reduce the heat to low; Slowly add in the parmesan cheese and whisk well before adding more. 
  13. Let the cheese melt and thicken the sauce.
  14. Serve over the top of the sliced chicken. 
  15. Garnish with basil if desired.

Spinach & Mushroom Quiche

Spinach & Mushroom Quiche

Gruyère cheese is a hard cheese from Switzerland with has a mild, nutty flavor and creamy texture that melts well. No Gruyère ? Substitute Swiss, Gouda or Cheddar. Just grate any of these cheeses from a block. Preshredded cheese are coated with anti-caking agents like cellulose or potato starch which make them not melt as well.


Makes 3 servings                                                             6 WW points / serving

Cooking spray
4 oz. sliced fresh mixed mushrooms such as cremini, shiitake, button and/or oyster mushrooms
3/4 cups thinly sliced sweet, white or yellow onion
1 1/2 tsp. thinly sliced garlic
2.5 oz. fresh baby spinach (about 4 cups), coarsely chopped
3 large eggs
2 Tbsp. fat free milk
2 Tbsp. light cream
1 1/2 tsp. Dijon mustard
1 1/2 fresh thyme leaves
1/8 tsp. Kosher salt
1/8 tsp. freshly ground black pepper
3/4 cup shredded Gruyère cheese

  1. Preheat oven to 375F. 
  2. Coat a 8-inch pie pan with cooking spray; set aside.
  3. In a skillet coated with cooking spray, cook the mushrooms over medium-high heat, stirring occasionally, until browned and tender, about 8 minutes. 
  4. Add onion and garlic; cook, stirring often, until soft, about 5 minutes. 
  5. Add spinach; cook, tossing constantly, until wilted, 1 to 2 minutes. Remove from heat.
  6. In a medium bowl, whisk eggs, milk, cream, mustard, thyme, salt and pepper; Fold in the mushroom mixture and cheese.
  7. Pour into the prepared pie pan; Bake until set and golden brown, about 30 minutes. 
  8. Let stand for 10 minutes, before serving.

Pork Meatball Chili

Pork Meatball Chili

This recipe is essentially using a vegetable chili as a sauce for pork meatballs that use tortilla chips as a binder. The cream in the meatballs keep them very tender and moist.
Mexican oregano has a strong, citrusy, and slightly licorice-like flavor, while Italian oregano (also known as regular or Mediterranean oregano) is more earthy, floral, and minty with a milder taste.


Makes 2 servings                                        3 WW pts / serving without garnishes

1/2 lbs. lean ground pork
2 Tbsp. + 2 tsp. light cream
2 Tbsp. crushed tortilla chips
1 Tbsp. grated Cojita or Parmesan cheese
1/2 beaten egg
1/2 tsp. garlic powder
1/2 tsp. Kosher salt

Cooking spray
1/4 large onion, chopped
1/4 red, orange or yellow bell pepper, chopped
1 small clove of garlic, chopped  
1 1/2 tsp. tomato paste
1 Tbsp.chili powder
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/2 tsp. dried Mexican oregano
Kosher salt and freshly ground black pepper
1/2 15-ounce cans kidney beans (do not drain)
3/4 14-ounce cans diced tomatoes
1/4 cup water + more for thinning if needed
1/2 tsp. dried cilantro
Kosher salt and freshly ground black pepper
Jalapeno peppers, reduced fat sour cream, reduced fat cheddar cheese, cilantro & /or scallions (optional)

  1. Make the meatballs by mixing the pork, cream, tortilla chips, parmesan cheese, egg, garlic powder and kosher salt. 
  2. Form into 1-inch balls; If time refrigerate for an hour.
  3. Meanwhile, heat a pot coated with cooking spray over medium heat and cook the onion and pepper cook, stirring, until softened, about 5 minutes; Add the garlic and cook  a couple more minutes.
  4. Add the tomato paste, chili powder, cumin, coriander and oregano; Cook, stirring, until brick red, about 2 minutes.
  5. Add the beans, tomatoes, 1/4 cup water and 1/2 teaspoon salt. Bring to a simmer and cook, adjusting the heat as needed and stirring occasionally, until thickened, and the flavors meld, about 60 minutes, adding additional water if it is getting too thick.
  6. Preheat the broiler.
  7. Remove the meatballs from the refrigerator; Broil the meatballs on a baking sheet until browned, 5 to 7 minutes.
  8. Add the meatballs to the finished chili and simmer 10 more minutes; Adjust seasoning with salt and pepper
  9. Garnish as desired prior to serving, if using.

Shrimp & Grits with Cajun Gravy

Shrimp & Grits with Cajun Gravy

These are the cheesiest grits I have ever had. The smoked black pepper white cheddar cheese was a challenge to find. The only brand I found was made by Tillamook and it was only available at Sprouts . I think you would be able to use a more readily available smoked cheddar and add freshly crushed black pepper to taste.



Makes 4 servings

Grits:
1 Tbsp. butter
1 1/2 tsp. Better Than Bouillon Premium Roasted Chicken Base™ or powdered bouillon
1/2 cup grits
2 cups water
1 oz. block cream cheese
2 oz. smoked black pepper white cheddar cheese, chopped
2 1/2 oz. gouda, shredded
2 Tbsp. + 2 tsp. cup heavy cream
1/2 tsp. ground white pepper

Cajun Gravy:
1 strip bacon
1/4 cup tomato paste
1 cup heavy cream
1 Tbsp. paprika
1 Tbsp. Slap Ya Mama Original Blend Cajun Seasoning™
2 1/2 tsp. ground white pepper
2 tsp. chili powder
pinch of dried parsley

Shrimp:
1 lb. large shrimp, shelled and deveined
1 Tbsp. olive oil
1 Tbsp. butter
1/2 tablespoon Slap Ya Mama Original Blend Cajun Seasoning™


  1. In a saucepan on medium heat, stir together the butter, bouillon and water until the butter is melted.
  2. Add the grits; Cook until the grits are fluffy and tender, about 15 minutes. 
  3. Add the cream cheese and stir until blended; Add the cheddar and gouda and stir until completely melted, about 10 minutes. 
  4. Add the heavy cream and white pepper; Set aside and keep warm.
  5. Cook the bacon in a skillet, then remove the bacon and crumble and set aside. 
  6. Mix the tomato paste into the skillet with the bacon fat and cook until it turns a darker color.
  7. Whisk in the the cream. 
  8. Add the paprika, Creole seasoning, white pepper, chili powder and parsley and bring to a simmer until it thickens.
  9. Meanwhile, melt the butter in a skillet with the oil.
  10. Season the shrimp with the cajun seasoning.
  11. Sauté the shrimp in a saucepan until opaque, about 2-3 minutes per side depending on the size of your shrimp.
  12. Plate the grits, top with cajun gravy then shrimp and crumble bacon on top.

Trout with Basil Sauce with Sherry Creamed Sugar Snap Peas & Mushrooms

After two weeks in Europe, you can not expect us to give up rich sauces cold turkey. We are easing our way back into a healthier diet ....... The CSA farm share provided us with a plethora of snap peas this week which will help in more ways than one.
Broiled Trout with Basil Sauce
adapted from Gourmet September 2000

1/2 cup fresh basil
2 Tbsp fresh parsley
1 small garlic clove
2 tablespoons  olive oil
1 1/2 teaspoon water
1 1/2 teaspoon lemon juice
Kosher salt & Freshly ground black pepper
1 lb. trout fillets
Nonstick cooking spray

Preheat broiler.
Meanwhile puree the basil, parsley, and garlic together in a small food processor or blender. Add the oil, water, lemon juice, and salt and pepper to taste and purée.

Arrange fillets, skin sides down,on a baking sheet coated with cooking spray. Season the fish with with salt and pepper. Broil until just cooked through, about 7 minutes.

Serve fish topped with the sauce.

Sherry Creamed Sugar Snap Peas & Mushrooms
adapted from  Food & Wine April 2015

2 tablespoons olive oil
1/4 pound mushrooms, cut into 1-inch pieces
Salt
1/2 shallot, minced
1/2 pound sugar snap peas, strings discarded, halved 
1/4  cup dry sherry
1/4 cup heavy cream
1 1/2 teaspoons lemon juice

Cook the mushrooms in 1 tablespoon of oil with a generous pinch of salt until they are browned and crisp. Add the shallot and the remaining oil and cook until the shallot is softened. Add the snap peas to the skillet and cook, stirring, for 1 minute.

Add the sherry to the skillet and simmer until reduced by half then add the cream and simmer until the mushrooms and snap peas are coated in a light sauce. Stir in the lemon juice and season with salt. Serve along side the fish.

A True Test of my Conviction and Will Power - Spaghetti Squash with Turkey Sausage or Penne with Sausage Creamy Sauce

Warren had a friend over from work tonight and requested a dish that I can not eat during the Advocare 24 day challenge. I did my best to create something for myself that would not make me feel left out. It was good but no quite the same.
Which would you prefer to have?


Penne with Sausage Creamy Sauce
½ lb. spicy Italian turkey sausage (casings removed)
½ c. diced onion
2 tsp. minced garlic
1 c. fresh diced tomatoes
½ c. heavy cream
1 lb. cooked penne
Salt and pepper to taste
6 large basil leaves

Cook the sausage on a saute pan. If the sausage is greasy, drain off grease.

Add the onions and cook until soft about 3 minutes. Add the garlic, stir it in for 1 min.  
Add diced tomatoes and heavy cream, cook until the tomatoes start wilting then add the cooked pasta.  
Stir to combine. Cook another 2-3 minute. Season to salt and pepper to taste. 
Transfer to a serving bowl. Tear the basil leaves and put on top. Serve with fresh grated Parmesan.

Spaghetti Squash to Sausage
1 small spaghetti squash (about 2 pounds)
1 medium onion, halved and thinly sliced 

1 small bell pepper chopped
1 clove garlic, chopped 
1/3 zucchini sliced and cut in half or quarters depending on the size
1 large tomato, chopped with seeds and juice 
1 tsp savory or thyme leaves
Fresh basil leaves
Vegetable stock



Pre-heat the oven to 350F. Halve the squash lengthwise and scoop out the seeds. Put the squash, cut-side down on a baking sheet with a small amount of vegetable stock to prevent sticking. Cook until tender, about 45 minutes. Allow to cool slight then shred flesh out of the skin into a large bowl.
In a saute pan, add the onion, pepper and garlic to a skillet with a small amount of stock. Saute until the onion begins to soften. Add the zucchini and saute until tender crisp. Add the tomato, savory and thyme leaves. Cook until tomato is heated through. Season to taste with salt and pepper. Keep warm.
Meanwhile, heat a pan over medium heat. Add a small amount of stock to saute the sausages, turning, until cooked through, about 20 minutes.Add additional stock if needed to keep from sticking.



When ready to serve, top the spaghetti squash with the sauteed vegetable mixture and serve sausages on the side.
