Turkey Albondigas Soup with Spinach and Hominy

Turkey Albondigas Soup with spinach is a nutritious, modern twist on the classic Mexican comfort food traditionally made with beef. This vibrant soup features tender, lean ground turkey meatballs (albondigas) seasoned with cilantro to provide a bright, spring-like flavor profile. The addition of fresh spinach at the very end of cooking adds a delicate texture and a boost of thyroid-supportive nutrients and iron while keeping the soup light and healthy.
Hominy is a type of corn that has undergone a specialized process called nixtamalization. It is a staple ingredient in Mexican and Southern American cuisines, known for its distinctive puffy texture and earthy, nutty flavor.


Makes 2 servings

1/3 lb ground turkey
4 tsp. panko breadcrumbs
1/3 egg
1/2 tsp.dried oregano
1 Tbsp. olive oil
2 2/3 cups Homemade chicken stock or canned broth
1/2 15-ounce can hominy, rinsed and drained
1/3 8-ounce can tomato sauce
1 carrot, peeled, thinly sliced
1/3 onion, finely chopped
1/3 4-ounce can diced green chilies
2 1/2 ounces coarsely chopped fresh spinach leaves
2 Tbsp.fresh cilantro, chopped
Kosher salt and freshly ground pepper, to taste
  1. Combine the turkey, panko, egg and oregano in a bowl.
  2. Using a 1 Tbsp. scoop, shape turkey mixture into one-inch meatballs.
  3. Heat the oil in a skillet; brown the meatballs
  4. Bring broth to simmer in pot over high heat; Add meatballs and brown 2-3 minutes to set shape then remove to a plate.
  5. Add the stock to the pot and bring to a boil, scraping up any browned bits sticking to the bottom.
  6. Add hominy, tomato sauce, carrots, onion and chilies; Return to a simmer.
  7. Add the meatballs and continue simmering until meatballs are cooked through and vegetables are tender, about 20 minutes.
  8. Add spinach and cilantro to soup and simmer until wilted, about 2 minutes.
  9. Season to taste with salt and pepper prior to serving.

Black Bean Dip

This is a quick10-minute appetizer It relies on a high-flavor combination of earthy beans and smoky aromatics to create a complex taste with minimal effort. Serve it topped with pickled jalapenos, chopped tomatoes and shredded cheese or use it to top nachos.


Makes about 2 cups

1 15-ounce can black beans, drained
1/2 cup canned fire-roasted tomatoes with green chiles
1/4 cup fresh cilantro, chopped 
1/2  garlic clove, grated
1 Tbsp.olive oil, 
the juice of 1/2 lime 
1/2 tsp. ground cumin, 
1/2 tsp. ancho chile powder 
1/2 tsp.Kosher salt.

  1. In the bowl of a mini food processor, pulse the black beans with  the tomatoes, cilantro, garlic clove, olive oil, lime juice of 1 lime, ground cumin, ancho chile powder and kosher salt until it reaches you desired consistency.
  2. Refrigerate until ready to use.

Asian Chicken Salad with Corn and Mango in Wonton Cups

Treat your guests to a vibrant, tropical-inspired appetizer with these Asian Chicken Salad Wonton Cups. Each bite features tender shredded chicken, juicy diced mango, and sweet corn kernels nestled in a golden-brown, crispy wonton shell.


Makes about 24 cups

1/4 cup brown sugar
1/4 cup orange juice
1/4 c soy sauce
1/4 cup rice vinegar
1 Tbsp. + 4 tsp. oyster sauce, divided
1 1/2 tsp. chopped fresh garlic
1 1/2 tsp. chopped fresh ginger
3/4 Tbsp. lemongrass paste
3 bone in skin on chicken thighs

1/2 cup bean sprouts, chopped
1/2 cup corn kernels
1/2 cup finely chopped carrot
1/2 cup finely chopped water chestnuts or jicama
1/2 cup finely chopped scallions
1/2 cup finely chopped mango
1/4 cup cilantro, chopped
1/4 cup basil leaves, chopped

Cooking spray
1/2 package (12 oz.) wonton wrappers

  1. Combine the brown sugar, orange juice, soy sauce, rice vinegar, 1Tbsp. oyster sauce, garlic, ginger and lemongrass paste in a sealable container and whisk to combine.
  2. Add the chicken to the marinade and place the sealed container in the refrigerator for 12-24 hours.
  3. Preheat oven to 300F. 
  4. Bake the chicken in the marinade for 75 minutes.
  5. Remove the chicken from the marinade and set aside to cool.  
  6. Increase oven temperature to 375F.
  7. Coat a mini muffin tin for with vegetable cooking spray. 
  8. Place one wonton sheet in each well, pushing down in center to form a cup. 
  9. Bake in preheated oven about 5-10 minutes until cups are golden. 
  10. Set the cups aside to cool.
  11. Meanwhile combine the bean sprouts, corn kernels, carrot, water chestnuts, scallions, mango, cilantro and basil in a large bowl.
  12. When the chicken is cool enough to handle, remove the skin and bones and discard; Chop the meat finely. (You should have about 8 ounces of cooked meat.)
  13. Add the chicken and and 4 tsp. oyster sauce to the large bowl and mix to combine.
  14. Fill the wonton cups with the chicken salad prior to serving.

Teriyaki Turkey Burgers with Asian Slaw

This burger hits every taste bud with the umami of the sweet and savoy teriyaki glazed turkey patty and the refreshing crunch of a chilled slaw. The combination of aromatics and acidic dressing provides a light yet satisfying alternative to traditional beef burgers.


Makes 2 servings

1 cup shredded green cabbage
1 cup shredded red cabbage
1/4 cup grated carrot
1 Tbsp. chopped cilantro
1 1/2 tsp. sesame oil
1 1/2 tsp. rice vinegar
1/4 tsp. Sriracha powder or sriracha sauce
1/8 tsp. onion powder
1/8 tsp. garlic powder
1/4 cup reduced-fat mayonnaise
1/2 cup Homemade Teriyaki Sauce or store bought
8 ounces ground turkey
2 hamburger buns, toasted or grilled

  1. Make the Asian slaw by mixing together the cabbages, carrot, and cilantro in a bowl.
  2. Whisk together the oil, vinegar. Sriracha powder, onion powder and garlic powder; Add to the cabbage mixture, toss to combine and refrigerate while making the burgers.
  3. Divide the ground turkey in half; Form eah into a patty.
  4. If time allows, refrigerate on a plate in the refrigerator for about an hour.
  5. Mix mayonnaise with 1 tablespoon of the teriyaki sauce; Set aside.
  6. Brush turkey burgers with some of the teriyaki sauce.
  7. Preheat a grill or grill pan.
  8. Cook about 2-3  minutes on each side  brushing with remaining teriyaki while cooking; The internal temperature should be 165F.
  9. Spread mayonnaise mixture inside buns; place turkey burgers in buns.
  10. Serve the Asian slaw on top of the burger or on the side.

Green Pico de Gallo

This is a bright green, fresh uncooked version of salsa. We especially like it mixed with traditional salsa on a taco or nachos.


Makes about 1 1/2 cups                                                        0 WW pts / 1/4 cup

8 oz. tomatillos, husks removed, rinsed, cut into ¼-inch pieces
1/4 medium red onion, finely chopped
2 jalapeƱos, seeds removed, chopped
2 garlic cloves, finely grated
3 Tbsp.fresh lime juice
1 Tbsp. finely chopped cilantro
1 Tbsp. finely chopped mint
Kosher salt

  1. Add the tomatillos, onion, jalapeƱos, garlic, lime juice, cilantro, and mint in a the bowl of a mini food processor.
  2. Pulse to desired consistency.
  3. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Chicken Wonton Tacos

Applebee's served a variation of this dish until about 2020 when they downsized their menu due to the pandemic.
To make the recipe a little easier, replace the red & green cabbage and carrot with bagged coleslaw mix.


Makes 8 tacos                                                                    1.5 WW pts / taco

1 Tbsp. hoisin sauce
1 1/2 tsp. soy sauce
1 1/2 tsp. sesame oil
1 garlic clove, minced
1/2 tsp.  minced fresh ginger
1/4 lb. ground chicken

Slaw
1/2 cup shredded green cabbage
1/2 cup shredded red cabbage
1/2 cup shredded carrot
1 scallion, shredded
3/4 tsp. rice vinegar
3/4 tsp. soy sauce
3/4 tsp. sesame oil
3/4 tsp. honey
8 wonton wrappers
Cooking spray
1 Tbsp. Sweet chili sauce
Chopped fresh cilantro

  1. In a bowl, mix the hoisin sauce, soy sauce, sesame oil, garlic, and ginger until blended. 
  2. Add the chicken to the bowl chicken and toss to coat; Let stand 15 minutes. 
  3. Preheat oven to 375Āŗ. 
  4. In another bowl, combine the cabbages, carrot, green onions, vinegar, soy sauce, sesame oil and honey and toss to coat.
  5. Cover the slaw and refrigerate until serving.
  6. Drape the wonton wrappers over edges of a 13x9-in. baking pan; Spritz with cooking spray. 
  7. Bake until lightly browned, about 7 minutes.
  8. While the wontons are baking, cook the chicken mixture until chicken is no longer pink, about 5 minutes.
  9. Fill wonton shells with chicken mixture. 
  10. Top with coleslaw, chili sauce and cilantro prior to serving.

Asian Wedding Soup

One of my favorite soups is Italian Wedding Soup. This recipe puts an Asian twist on it with the flavors of dumpling filling and ramen noodles.
If you are not going to be eating the soup shortly after it is cooked, cook the ramen separately and store in a separate container. This prevents the noodles from over absorbing the broth and becoming soggy.
Reminder: If a recipe calls for chopped fresh herbs, measure the herbs AFTER you chop them' if herbs, chopped measure before chopping.



Makes 2 servings                                                                  8 WW pts / serving

1/2 lb. ground lean turkey
1 1/2 tsp. chopped fresh cilantro
1 1/2 tsp. soy sauce
1/2 large beaten egg
1/4 cup panko breadcrumbs
1/2 tsp. sugar substitute
1/8 tsp. Kosher salt
1 clove garlic, grated
1 scallion, thinly sliced
Cooking spray

Cooking spray
3 scallions, thinly sliced, white and green parts separated
Pinch of Kosher salt
1 1/2 tsp. minced ginger
1 clove garlic, minced
5 cups Homemade chicken stock or canned chicken broth
1 3 oz. package dried ramen noodles. broken up
1 cup sliced spinach
Sambal oelek or your preferred Asian chili sauce, for serving

  1. In a bowl, mix the turkey, cilantro, soy sauce, egg, panko, sugar substitute, salt, garlic and scallions together. 
  2. Scoop the meatball mixture into 12 small balls and roll. 
  3. In a pan coated with cooking spray or in a slow cooker with a searing function (coat the bottom of the insert with cooking spray), cook the meatballs until cooked through , about 4-6 minutes, tuning to brown on all sides. 
  4. Remove the meatballs to a plate and store in the refrigerator until the soup base is made.
  5. Recoat the pan or slow cooker insert with cooking spray; SautĆ© the scallion whites with  a pinch of salt and cook for a couple of minutes until softened.
  6. Add the ginger and garlic and cook until fragrant, about another minute. 
  7. Add the stock, cover and and cook on high for, 2 hours. If using a traditional slow cooker combine the sautƩed scallion mixture and the both to the slow cooker and cook on high for 2 hours.
  8. Open the slow cooker and set to sautĆ©; Once it is boiling, add the ramen, spinach and meatballs and cook cook for another 3 minutes until the noodles and spinach are soft and the meatballs are heated through.  If using traditional slow cooker, transfer the both to a pot, bring to a boil; Add ramen, spinach and meatballs and cook for about 3 minutes.
  9. Adjust seasoning as needed. 
  10. Add the scallion greens and serve with sambal oelek.

Korean Bulgogi Tacos

Bulgogi is a Korean dish of thinly sliced, marinated meat, most commonly beef, that is grilled or stir-fried. Feel free of substitute boneless skinless chicken for the short ribs for the non-beef eaters.
This recipe was originally featured on Diners Drive Ins and Dives from Garbo's Grill in Key West.



Makes 6 tacos                                                                    15 WW pts / taco

1 1/2 lbs. boneless, beef short ribs or 2 - 2 1/2 lbs. bone in short ribs
1/2 cup soy sauce
1/4 cup mirin
2 Tbsp. Truvia brown sugar blend
2 Tbsp. sesame oil
3 cloves garlic
3 scallions
1 tsp. peeled and grated fresh ginger
1 1/2 cups roughly chopped green or Napa cabbage
1/2 cup matchstick-size jicama slices
1 1/2 Tbsp. chopped fresh cilantro
2 large or 3 small scallions, slivered

1 lime, juiced, about 2 Tbsp.
2 Tbsp. soy sauce
1 Tbsp. mirin
1 tbsp. Sriracha
1 Tbsp. olive oil

6 6-inch flour tortillas
Sriracha, for serving

  1. If using bone-in short ribs, remove the bones, reserving for making stock if desired.
  2. Trim any excess fat from the boneless short ribs then thinly slice the beef and cut into 1 1/2-inch pieces and place in a large container.
  3. In a small food processor, blend the soy sauce, mirin, sugar, sesame oil, garlic, scallions and ginger. Pour half of the sauce over the short ribs; Seal tightly and marinate the short ribs in the refrigerator for at least 3 hours.
  4. Place the other half of the marinade in a pan and reduce over medium heat, stirring occasionally, until the mixture is thick, about 5 minutes; Place in a serving bowl and reserve to drizzle on the tacos.
  5. Place the cabbage, jicama, cilantro and scallions together in a medium bowl; set aside.
  6. In a small bowl, whisk together the lime juice, soy sauce, mirin, sriracha and oil; Store the dressing in the fridge until ready to use.
  7. Heat oven and ovenproof bowl to 250F.
  8. Heat a large skillet over high heat. 
  9. Cook 1/3 - 1/2 of the meat in the skillet 2 minutes, flip. and cook an additional 3 minutes, transfer to the heated bowl and store in warm oven until ready to make the taco.
  10. Repeat with remaining meat.
  11. Heat tortillas in microwave, about 20 seconds.
  12. Make the tacos by piling some slaw, dressing, beef, reserved and reduced marinade.
  13. Serve with extra sriracha if desired.

Easy Oven Baked Cilantro Lime Salmon

This is  a quick and easy salmon recipe flavored with cilantro, lime and a hint of jalapeno. Adjust the heat level by adding more, less or no jalapeno.


Makes 2 servings                                                                2 WW pts / serving

Cooking spray
3/4 lb. fresh salmon
1 Tbsp. olive oil
1 Tbsp. water
1/2 jalapeƱo, roughly chopped (or to taste)
2 Tbsp. cilantro leaves, roughly chopped
1 garlic clove, chopped
1 lime juiced and zested
Kosher salt and freshly ground pepper


  1. Preheat the oven to 400°F. 
  2. Line a baking sheet with foil and spray with cooking spray.
  3. Add the olive oil, water, jalapeƱo, cilantro, garlic, and lime juice and zest to a food processor and process until the mixture is a spreadable, paste-like consistency.
  4. Place the salmon, skin side down, on the baking sheet, pat dry with a paper towel, and season with salt and pepper. 
  5. Spread the cilantro lime mixture over the top, coating the fish in an even layer.
  6. Transfer the baking sheet to the oven and bake until the internal temperature of the thickest portion of the salmon reaches 145°F, about 15 minutes. 
  7. Serve warm.

Pork Meatball Chili

Pork Meatball Chili

This recipe is essentially using a vegetable chili as a sauce for pork meatballs that use tortilla chips as a binder. The cream in the meatballs keep them very tender and moist.
Mexican oregano has a strong, citrusy, and slightly licorice-like flavor, while Italian oregano (also known as regular or Mediterranean oregano) is more earthy, floral, and minty with a milder taste.


Makes 2 servings                                        3 WW pts / serving without garnishes

1/2 lbs. lean ground pork
2 Tbsp. + 2 tsp. light cream
2 Tbsp. crushed tortilla chips
1 Tbsp. grated Cojita or Parmesan cheese
1/2 beaten egg
1/2 tsp. garlic powder
1/2 tsp. Kosher salt

Cooking spray
1/4 large onion, chopped
1/4 red, orange or yellow bell pepper, chopped
1 small clove of garlic, chopped  
1 1/2 tsp. tomato paste
1 Tbsp.chili powder
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/2 tsp. dried Mexican oregano
Kosher salt and freshly ground black pepper
1/2 15-ounce cans kidney beans (do not drain)
3/4 14-ounce cans diced tomatoes
1/4 cup water + more for thinning if needed
1/2 tsp. dried cilantro
Kosher salt and freshly ground black pepper
Jalapeno peppers, reduced fat sour cream, reduced fat cheddar cheese, cilantro & /or scallions (optional)

  1. Make the meatballs by mixing the pork, cream, tortilla chips, parmesan cheese, egg, garlic powder and kosher salt. 
  2. Form into 1-inch balls; If time refrigerate for an hour.
  3. Meanwhile, heat a pot coated with cooking spray over medium heat and cook the onion and pepper cook, stirring, until softened, about 5 minutes; Add the garlic and cook  a couple more minutes.
  4. Add the tomato paste, chili powder, cumin, coriander and oregano; Cook, stirring, until brick red, about 2 minutes.
  5. Add the beans, tomatoes, 1/4 cup water and 1/2 teaspoon salt. Bring to a simmer and cook, adjusting the heat as needed and stirring occasionally, until thickened, and the flavors meld, about 60 minutes, adding additional water if it is getting too thick.
  6. Preheat the broiler.
  7. Remove the meatballs from the refrigerator; Broil the meatballs on a baking sheet until browned, 5 to 7 minutes.
  8. Add the meatballs to the finished chili and simmer 10 more minutes; Adjust seasoning with salt and pepper
  9. Garnish as desired prior to serving, if using.

Asian Meatballs

Asian Meatballs

Soy paste is a thick sweetened soy sauce also known as ketjap manis. Don't have either you can make it at home.
White pepper is frequently used in Asian cooking because of it has a muskier and sharper taste profile than its black counterpart. Don't have it you can use black pepper, pink peppercorns, green peppercorns or paprika.

served on Hibachi Noodles
Makes 6 meatballs                                                              1 WW pts / meatball

Cooking spray
1 tsp. olive oil
1 1/2 Tbsp. thinly sliced scallions
1 1/2 tsp. minced shallots
3/4 tsp. teaspoons minced garlic
1/2 tsp. finely grated peeled fresh ginger
1/2 lb. lean ground pork
1/2 large egg, lightly beaten
1 1/2 tsp. soy paste
1 1/2 tsp. minced cilantro
1 1/2 tsp. minced basil
1 1/2 tsp. minced mint
1/2 tsp. Kosher salt
pinch freshly ground white pepper

  1. Preheat the oven to 400°. 
  2. Line a baking sheet with foil; COat with cooking spray.
  3. Heat the oil in a small skillet. 
  4. Add the scallions, shallots, garlic and ginger and cook, stirring, until softened, about 4 minutes. 
  5. Place the mixture into a medium bowl and let cool.
  6. Add the ground pork, egg, soy paste, cilantro, basil, mint, salt and white pepper to the bowl.
  7. Mix the mixture gently but thoroughly.
  8. Divide the mixture into 6 equal portions and roll into balls.
  9. Transfer the meatballs to the prepared baking sheet and bake for about 16 minutes, or until browned; Serve immediately.

Quick Butter-Braised Tomatoes and Dumplings

Leaning on frozen dumplings makes this dish quick and easy after at a long day at work.  
Use whatever tomatoes  that you have on hand. As the tomatoes break down and release their juices, the dumplings will steam.


Makes 2 servings                                                        8 WW pts / serving                                                            
3 garlic cloves, finely chopped
1 1" piece ginger, finely grated
3 Tbsp. lower fat butter alternative
2 1/2 Tbsp. soy sauce
1 1/2 Tbsp. mirin (sweet Japanese rice wine)
1 tsp. toasted sesame oil
1/2 lb. Roma tomatoes, cut into wedges
1/2 1-lb. bag frozen gyoza
Finely chopped cilantro and basil for garnish, optional

  1. Combine the garlic, ginger, butter alternative, soy sauce, mirin and sesame oil in a large high-sided skillet.
  2. Arrange the tomatoes in the pan and nestle in the gyoza 
  3. Set pan over high heat and bring liquid to a simmer.
  4. Cover pan, reduce heat to medium, and cook until gyoza look translucent and are cooked through, about 1 minute less than package instructions (8–10 minutes for most dumpling brands).
  5. Uncover pan, spoon sauce over gyoza, and top with mixed tender herbs, if using.

Black Bean & Chorizo Soup

Black Bean & Chorizo Soup

This is a hearty, satisfying soup that freezes well.


Makes 2 servings                                                            4 WW points / serving

8 oz. dried black beans, rinsed and soaked overnight
1 small bay leaf
1/3 tsp. dried thyme
1 small parsley sprig
1 1/2 onions—1/2 quartered and 1 finely chopped
1 1/2 tsp. Kosher salt 
2 tsp. olive oil  
1 garlic cloves, minced 
1/2 tsp. ground cumin 
2 cups homemade chicken stock or canned broth
1 cup water
Kosher salt  & freshly ground black pepper, to taste

Thinly sliced radishes, cilantro sprigs for garnish, optional
Lime wedges and tortilla chips, for serving

  1. Drain the black beans.
  2. In a pot, combine them with enough water to cover by 3 inches. 
  3. Place the bay leaf, parsley and thyme in a piece of cheesecloth and secure with a string to make a satchel
  4. Add the herb satchel, quartered onion and salt tp the beans; Bring to a boil over medium-high heat. 
  5. Reduce the heat to low, cover and cook until the beans are just tender, about 1 hour. 
  6. Drain the beans and discard the herb satchel and onion; Wipe out the pot.
  7. In the same pot, heat the olive oil; Add the chorizo and cook over moderate heat, stirring occasionally, until starting to crisp, about 4 minutes. 
  8. Add the chopped onions, the garlic and cumin; season with salt and pepper, to taste.
  9. Cook over moderate heat, stirring occasionally, until the onions are tender, about 10 minutes. 
  10. Add the stock and 1 cup of water and bring to a boil. 
  11. Return the beans to the pot, cover, reduce the heat to low and continue cooking until the beans are very tender and the soup has thickened, about 1 hour and 45 minutes. You may need to add up to another cup of broth or water towards the end of cooking it it thickens faster than the beans cook.
  12. Ladle the soup into bowls and serve garnished with radishes and cilantro, if using. 
  13. Pass lime wedges and tortilla chips at the table.

Baked Coconut Shrimp with Pineapple Cilantro Dip

No one really knows the origins of crunchy, breaded coconut shrimp, but it is thought to have originated in the tiki bar culture, which was all the rage in the United States after World War II. This is when access to tropical produce like coconuts and pineapples became an everyday thing.
Coconut shrimp is usually deep fried but this recipe oven bakes which lightens an old favorite.



Makes 2 servings                                                        4 WW pts / serving

2 Tbsp. + 2 tsp. shredded unsweetened coconut flakes
1/4 cup + 2 Tbsp. panko
Kosher salt and freshly ground black pepper
2 Tbsp. rice flour
2 egg whites
1/2 tsp. coconut rum
6 extra large shrimp, peeled and deveined, tails left on
4 oz. fresh pineapple, cut into chunks
1/2 tsp. sambal oelek
1/8 tsp. garlic powder
2 Tbsp. cilantro leaves

  1. Preheat the oven to 325F.
  2. Line a baking sheet with parchment; Spread the coconut flakes on the baking sheet.
  3. Bake in preheated oven for 3 minutes; Stir with a spatula.
  4. Cook an additional 3 minutes or until golden brown; Transfer the coconut to a mini food processor; Finely chop the coconut; Transfer the coconut to a shallow bowl.
  5. Add the panko and season with salt and pepper.
  6. Place the flour in another shallow bowl.
  7. Increase the oven temperature to 450°.
  8. Place a rack on the baking sheet.
  9. In a medium bowl, whisk the egg whites until foamy; Stir in the coconut extract.
  10. Coat the shrimp in the flour, shaking off any excess.
  11. Dip in the egg white mixture to coat completely.
  12. Toss in the coconut-panko mixture.
  13. Place on a wire rack set on a baking sheet.
  14. Bake until golden and the shrimp are cooked through, 8 to 10 minutes.
  15. Meanwhile, put the pineapple, sambal, garlic powder and cilantro in the bowl of a mini food processor until coarsely chopped.
  16. Season to taste with with salt and pepper.
  17. Serve the shrimp with the pineapple-cilantro dip.

Arroz Rojo - Red Rice

Arroz Rojo - Red Rice

Arroz rojo or red rice is a Mexican staple.


Makes 3 servings                                                              4 WW points / serving

1/2 14 1/2-ounce can peeled whole tomatoes in juice, drained
1 1/2 Tbsp. chopped onion
1 small garlic clove, peeled
1 1/2 tsp. olive oil
1/2 cup white rice
1/2 cup hot water
1/2 medium carrot, peeled, cut into 1/3-inch pieces
2 Tbsp. + 2 tsp  frozen peas
2 Tbsp. + 2 tsp  frozen corn
3 fresh cilantro sprigs, tied together with kitchen twine
1/2 jalapeno, cut lengthwise leaving seeds and ribs intact
1/2 tsp. Kosher salt

  1. Puree tomatoes, onion, and garlic in blender until smooth.
  2. Heat oil in a saucepan over medium-high heat.
  3. Add rice; Stir until rice is pale golden, about 1 minute. 
  4. Stir in tomato puree, hot water, carrot, peas, corn, cilantro sprigs, chiles, and salt. 
  5. Bring to boil; Reduce heat to low, cover, and cook until almost all liquid is absorbed, about 12
  6. minutes. 
  7. Uncover and cook until rice is tender and all liquid is absorbed, about10 minutes longer. 
  8. Remove from heat, cover, and let stand 5 minutes. 
  9. Discard cilantro and chiles. 
  10. Fluff rice with fork before serving.

Asian Pork Tenderloin with Sesame Snap Peas

We love Asian flavors and Emeril Lagasse was one of the first chef's I watched on Food Network I never realized he created his own Asian seasoning - Emeril's Asian Essence™. It does not look like it is available to purchase any longer but there is a recipe on Emeril.com. I modified the recipe there to create only the 1 Tbsp. that you need for this recipe. You can click on the link in the recipe or use you favorite seasoning blend.
This is a little spicy so adjust the red cayenne in the seasoning blend to your taste.



Makes 2 servings                                                          4 WW points / serving                                                          
2 Tbsp. coarsely chopped scallions
2 Tbsp. coarsely chopped shallots
1/4 cup soy sauce
2 Tbsp. pineapple juice

2 Tbsp. loosely packed fresh cilantro leaves
1 Tbsp. coarsely chopped fresh ginger
1 Tbsp. honey
1 Tbsp.  rice wine vinegar
1 Tbsp.  Emeril's Asian Essence
1 Tbsp. chopped garlic
1 1/2 tsp. sesame oil
1 1/2 tsp. crushed red pepper
1/2 pork tenderloins (about 1/2 pounds total)

1 tsp. sesame oil
1/4 lb. snap peas, cleaned
3/4 tsp black sesame seeds
1/4 lemon, juiced

Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh parsley leaves

  1. Combine the green onions, shallots, soy sauce, pineapple juice, cilantro, ginger, honey, rice wine vinegar, Essence, garlic, sesame oil and crushed red pepper into the bowl of  a mini food processor; Process to puree. 
  2. Place the tenderloins in a quart plastic storage bag and pour in the marinade. 
  3. Seal the bag and refrigerate for 1 hour.
  4. Preheat the oven to 400 degrees F.
  5. Heat an ovenproof skillet over high heat; Add the tenderloins and sear, turning to ensure even browning, about 4 minutes. 
  6. Transfer to the oven and cook for 10 to 13 minutes, or until an instant-read thermometer inserted in the thickest part reads 140 F. 
  7. Remove from the oven and let rest for 5 minutes.
  8. While the pork is cooking, heat a sautĆ© pan over high heat, add sesame oil and heat. 
  9. Add the snap peas and stir-fry for 3 minutes. 
  10. Add the sesame seeds and toss well. Add the lemon juice and zest
  11. season to taste with salt and pepper. 
  12. Garnish with parsley before serving the peas topped with the pork.

Chicken Soup with Cilantro and Lemon

I had an abundance of cilantro from my indoor hydroponic planter so I had to find some ways to use it.


Makes 2 servings                                                             3 WW points / serving                                                           
Cooking spray
6 oz chicken tenders or boneless skinless chicken breasts
Kosher salt and freshly ground black pepper

1 cups coarsely chopped onions
1 1/2 plum tomatoes, sliced
2 2/3 Tbsp lemongrass paste
2 Tsp. coriander seeds
2/3 tsp. cumin seeds
2/3 tsp. fennel seeds
2 2/3  cups homemade chicken stock or canned broth
2 2/3 Tbsp. fresh cilantro, chopped

2 oz. small shell pasta, freshly cooked
1/4 cup grape tomatoes, seeded, chopped
2 2/3 Tbsp. fresh lemon juice
Fresh lemon slices (optional)

  1. Preheat a skillet over medium high heat.
  2. Sprinkle chicken with salt and pepper.
  3. Coat the skillet with cooking spray; SautĆ© the chicken until cooked through, about  3minutes per side. Transfer chicken to plate; Set aside.
  4. Coat the skillet again with the cooking spay; Cook the onions, tomato, lemongrass, coriander seeds, cumin seeds and fennel seeds; Cook until fragrant, about 2 minutes. 
  5. Add stock and 1 1/3 Tbsp. chopped cilantro; Simmer 20 minutes to blend flavors.
  6. Strain broth into a saucepan.
  7. Slice cooked chicken crosswise into bite size pieces; Add to the broth. 
  8. Add chopped tomatoes, lemon juice and remaining 1 1/3 Tbsp.  cilantro to soup. 
  9. Season to taste with salt and pepper; Return the soup to a simmer.
  10. Divide cooked pasta between 2 bowls; Ladle soup into bowls.

Coconut Braised Chicken with Chorizo & Potatoes

Coconut Braised Chicken with Chorizo & Potatoes

This is a mash up of Central and South American ingredients that create a very rich stew even with using light coconut milk. I think if a full fat coconut milk was used it would be too rich. The gremolata added a nice brightness to the dish but the coffee did nit seem to add any flavor.

I have found 2 new tricks when dealing with ginger:
  • Store it in the freezer and grate it on a microplane - it never shrivels up or goes bad
  • Don't bother peeling it - If it is good enough for Iron Chef Alex Guarnaschelli it is good enough for me.

Makes 3 servings

1 Tbsp olive oil
3 large bone in chicken thighs
Kosher salt & Freshly ground black pepper
1/4 lb. fresh Mexican chorizo
1/2 onion, thinly sliced
2 tsp. grated fresh ginger
1 small garlic clove, minced
1/2 dried chile de arbol, broken in half
1 can (13.5 oz.) light coconut milk
1/2 lb. baby potatoes, larger ones cut in half
1 Tbsp. lime juice, plus wedges for serving
1 tsp. butter

2 Tbsp. finely chopped cilantro
1/4 tsp. finely ground coffee
1 tsp. finely grated lime zest

  1. Preheat the oven to 425°. 
  2. Season the chicken with salt and pepper. 
  3. In a Dutch oven, heat the oil and brown the chicken over moderate heat, turning occasionally, until nicely browned. 
  4. Transfer the chicken to a large plate. 
  5. Add the chorizo and onion to the pot and cook, stirring to break up the meat, until the onion is translucent, about 3 minutes. 
  6. Stir in the ginger, garlic and chile and cook until fragrant, 1 minute. 
  7. Add the coconut milk, potatoes and return the chicken to the casserole and bring to a simmer. 
  8. Cover and braise in the oven for about 1 hour, until the chicken is cooked through. 
  9. Stir in the lime juice and butter and season with salt.
  10. To make the gremolata, combine the ingredients cilantro, coffee and lime zest; mix well.
  11. To serve, spoon the broth and potatoes into shallow bowls, top with the braised chicken and potatoes. Garnish with the gremolata and serve with lime wedges.

Chicken and Pinto Bean Soup

Chicken and Pinto Bean Soup

Feel free to use any type of beans that you have on hand.


Makes 3 servings                                                          4 WW pp / serving

1/4 lb. boneless, skinless chicken breasts, cut into 1/2 inch pieces
2 cups homemade chicken stock or canned broth
3/4 cups canned or frozen corn
1/2 can (15 oz.) pinto beans, rinsed and drained
1/2 can (10 oz.) diced tomatoes and habaneros, undrained
1 Tbsp. cilantro, minced
1 1/2 tsp. chili powder
1/4 tsp. ground cumin
1.5 oz. baked tortilla chips
2 Tbsp. fat free cheddar cheese

  1. In a soup pot coated with cooking spray, cook the chicken until no longer pink, about 5 minutes.
  2. Add broth, corn, beans, tomatoes, cilantro, chili powder and cumin to the pot; Bring to a boil.
  3. Reduce heat and simmer until flavors are melded, about 15 minutes.
  4. Add the cilantro and serve with chips and cheese on the side.

Cilantro Lime Cauliflower-Rice Blend

Cilantro Lime Cauliflower-Rice Blend

If you don't like the taste or texture of cauliflower rice try adding some cooked rice to it.
Makes 6 servings                                                                1 WW pp / serving  
                                      
1/3 cup Basmati rice
1 bay leaf
Kosher salt
1 cup riced cauliflower
2/3 tsp. dried cilantro
2 tsp. lime juice
2 tsp. lemon juice
Freshly ground black pepper
  1. Bring 1 2/3 cups of water to a boil in a small pot.
  2. Add rice, bay leaf, cilantro and salt to taste; cook uncovered for 10 minutes until tender.
  3. Place cauliflower in a bowl, drain rice catching the water in the bowl with the cauliflower, set aside for 2 minutes.
  4. Return the rice to the pot and add the cauliflower, lime and lemon juice.
  5. Season to taste with salt and pepper before serving.
