Cilantro Lime Cauliflower-Rice Blend

If you don't like the taste or texture of cauliflower rice try adding some cooked rice to it.
Makes 6 servings 1 WW pp / serving
1/3 cup Basmati rice
1 bay leaf
Kosher salt
1 cup riced cauliflower
2/3 tsp. dried cilantro
2 tsp. lime juice
2 tsp. lemon juice
Freshly ground black pepper
- Bring 1 2/3 cups of water to a boil in a small pot.
- Add rice, bay leaf, cilantro and salt to taste; cook uncovered for 10 minutes until tender.
- Place cauliflower in a bowl, drain rice catching the water in the bowl with the cauliflower, set aside for 2 minutes.
- Return the rice to the pot and add the cauliflower, lime and lemon juice.
- Season to taste with salt and pepper before serving.
