 Caramelized Carrot Mash

adapted from Food & Wine

We are substituting vegetable mashes in place of mashed potatoes and they have been surprisingly satisfying.


Makes 3 servings                                                      0 WW Blue points / serving

Cooking spray

1 1/4 lbs. carrots, peeled and halved lengthwise

Kosher salt and Freshly ground black pepper

3 Tbsp. homemade chicken stock or canned broth

  1. Preheat the oven to 400F.
  2. Coat a baking sheet with cooking spray.
  3. Lay out the carrots on a single layer, cut side down; coat with cooking spray and season with salt and pepper.
  4. Bake for 45 minutes or until the carrots are tender and slightly browned on the bottom.
  5. Transfer the carrots to a food processor* and add the stock.
  6. Process to desired level of smoothness.
  7. Taste and adjust seasoning as needed before serving.
