Caramelized Carrot Mash
adapted from Food & Wine
We are substituting vegetable mashes in place of mashed potatoes and they have been surprisingly satisfying.
Cooking spray
1 1/4 lbs. carrots, peeled and halved lengthwise
Kosher salt and Freshly ground black pepper
3 Tbsp. homemade chicken stock or canned broth
- Preheat the oven to 400F.
- Coat a baking sheet with cooking spray.
- Lay out the carrots on a single layer, cut side down; coat with cooking spray and season with salt and pepper.
- Bake for 45 minutes or until the carrots are tender and slightly browned on the bottom.
- Transfer the carrots to a food processor* and add the stock.
- Process to desired level of smoothness.
- Taste and adjust seasoning as needed before serving.
