Crustless Spinach, Onion & Feta Quiche

What is the difference between quiche and a frittata? A quiche is cooked in the oven while a frittata is cooked primarily on the stovetop and finished in the oven.
Cooking spray
1 medium onion, chopped
6 oz. fresh spinach
2 tsp. minced garlic
Kosher salt & Freshly crushed black pepper
5 eggs
1/4 c. skim milk
2 oz. fat free feta cheese
- Preheat oven to 350F.
- In a skillet coated with cooking spray, cook the spinach until wilted, about 5 minutes.
- Remove the spinach to a kitchen towel and wring dry; Place in a pie pan coated with cooking spray.
- Add some additional cooking spray to the pan, sauté the onion and garlic until softened, about 3-5 minutes.
- Put the onion mixture in the pie pan.
- Whisk the eggs and milk until well combined.
- Gently pour into the pie pan.
- Equally distribute the feta over the quiche.
- Bake in the preheat oven for 20-25 minutes or until completely cooked through and set.
- Allow to rest for 5 minutes before serving
