Asian Style Cabbage Soup
adapted from How to Cook Everything (1998)
Makes 3 servings 0 WW Blue points
1/2 lb Napa cabbage, shredded
Cooking spray
1 medium onion, sliced
Kosher salt and freshly ground black pepper to taste
1 1/2 tsp peeled minced, fresh ginger
1 Tbsp soy sauce
2 1/2 cups chicken stock
Chopped scallions, green part only
- In a pot costed with cooking spray, cook the cabbage and onion until soft and beginning to brown a little.
- Add the ginger and cook for another minute.
- Add the stock and soy sauce and cook for another 15 minutes.
- Ladle into bowls and top with scallions. Serve.
