Parslied Rice
adapted from Bon Appétit January 2000
Makes 2 cups 2 WW Blue points per 1/3 cup
2 cups chicken broth
1 cup long-grain white rice
2 Tbsp chopped fresh parsley
1 cup long-grain white rice
2 Tbsp chopped fresh parsley
- Bring the broth to a boil in a pot.
- Add the rice. Return to boil.
- Reduce the heat to low. Cover and cook until broth is absorbed, about 20 minutes.
- Remove from heat. Mix in parsley.
- Fluff rice with fork. Season with salt and pepper to taste.
