Parslied Rice

Parslied Rice 
adapted from Bon Appétit January 2000 

Makes 2 cups                        2 WW Blue points per 1/3 cup

2 cups chicken broth
1 cup long-grain white rice
2 Tbsp chopped fresh parsley
  1. Bring the broth to a boil in a pot. 
  2. Add the rice. Return to boil. 
  3. Reduce the heat to low. Cover and cook until broth is absorbed, about 20 minutes. 
  4. Remove from heat. Mix in parsley. 
  5. Fluff rice with fork. Season with salt and pepper to taste.
