Fingerling Potatoes

Fingerling potatoes are small, sweet and earthy with a creamy texture.
Very little needs to be done to them to make them delicious.
Makes 2 servings 1 WW pt. / serving
2 tsp. olive oil
1 Tbsp. Kosher salt plus pinch for seasoning
Freshly ground black pepper

- Rinse the potatoes and put them in a large saucepan.
- Cover them with cold water, add 1 tablespoon of salt, and bring to a boil.
- Simmer uncovered for 15 to 20 minutes, or until they are just tender.
- Drain the potatoes in a colander and place a kitchen towel on top, allowing them to steam for 5 to 10 minutes.
- Place in a bowl and drizzle with the olive oil.
- Season to taste with salt and pepper before serving.
