Turkey Sausage Stuffed Peppadews

A Peppadew is a piquant pepper, also known as the Juanita pepper, that has been pickled. It resembles a cherry tomato but there is no relation. You can find them jarred or in the Olive Bar section of your favorite supermarket.
Makes 12 items 1 WW Blue point / 6 items
2.75 oz. raw homemade turkey sausage
2 2/3 Tbsp. cooked rice
12 peppadew peppers, drained
1/2 tsp. grated Parmesan cheese
- Preheat the oven to 450F.
- Combine the raw turkey sausage with the rice.
- Divide the sausage mixture among the peppers and stuff.
- Place the peppers in a small baking dish coated with cooking spray; just large enough to hold the peppers so they help to support each other upright.
- Transfer to the oven and bake for about 15 minutes or until the sausage is cooked through.
- Serve warm or at room temperature.
