Mediterranean Chicken
adapted from Keto for Beginners (2020)
The sauce is a bit spicy. Adjust the crushed red pepper to your heat tolerance.
Cooking spray
4 boneless, skinless chicken breasts
1 Tbsp. Montreal Steak seasoning
4 garlic cloves, minced
1 Tbsp. capers, rinsed
1 tsp. dried oregano
1 Tbsp. dry white wine
1 Tbsp. water
1 cup chopped tomatoes
1/2 tsp. crushed red pepper
10 black olives, sliced
Kosher salt & freshly ground black pepper
- Preheat the oven to 400F.
- Sprinkle both sides of the chicken with the Montreal steak seasoning.
- In a frying pan coated with cooking spray; cook 2 minutes.
- Turn the chicken over and cook for 2 more minutes.
- Place the pan in the preheated oven for 10-15 minutes or until cooked through.
- Transfer the chicken to a plate and cover to keep warm.
- In the same pan, add the garlic, capers, oregano, wine, water, tomatoes and olives. Cook for 2 minutes.
- Season to taste with salt and pepper.
- Serve the chicken topped with the sauce.
