Carrot Coins with Dill

Carrots and dill are a wonderful pairing.



Makes 4 servings                                                0 WW Blue points / serving

4 large carrots, peel and cut into 1/4 inch thick coins
1 Tbsp. fresh chopped dill
Kosher salt & Freshly ground black pepper

  1. Bring a pot of salted water to a boil.
  2. Add the carrots and cook until tender crisp, about 5 minutes
  3. Drain the carrots and return to the pan.
  4. Spray with the cooking oil spray and toss with dill.
  5. Season to taste with salt and pepper prior to serving.
