Carrot Coins with Dill
Carrots and dill are a wonderful pairing.
Makes 4 servings 0 WW Blue points / serving
4 large carrots, peel and cut into 1/4 inch thick coins
1 Tbsp. fresh chopped dill
Kosher salt & Freshly ground black pepper
- Bring a pot of salted water to a boil.
- Add the carrots and cook until tender crisp, about 5 minutes
- Drain the carrots and return to the pan.
- Spray with the cooking oil spray and toss with dill.
- Season to taste with salt and pepper prior to serving.
