Garlicky Cauliflower Puree

Pureed cauliflower makes a great substitute for mashed potatoes when you are trying to cut the carbs.
served with Dijon Chicken |
Makes 2 servings 0 WW Blue points / serving
1 lb. cauliflower florets
2 garlic cloves, smashed
2/3 cup homemade chicken stock or canned broth
1 tsp. Kosher salt
1/4 cup skim milk
2 tsp. Parkay cooking oil spray
Garlic Salt & White Pepper
- Simmer the cauliflower , garlic, broth and salt in a saucepan, covered, until very tender, about 20 minutes.
- Transfer the mixture to a food processor * and puree the mixture with the milk and Parkay until smooth.
- Season to taste with garlic salt and white pepper before serving.

* If you do not have a food processor you can use a blende, potato masher or fork.
