Chicken Satay with Peanut Dipping Sauce

Makes 4 servingsChicken 0 WW Blue points / serving Sauce 1 WW Blue point / Tbsp.
1 1/2 lbs. boneless, skinless chicken breasts, sliced into strips
1 tsp. Szechuan pepper salt or 3/4 tsp kosher salt and 1/4 tsp freshly ground black pepper
1/2 cup apple juice
1/4 cup peanut butter
2 Tbsp. soy sauce
2 tsp. red curry paste
- Put the apple juice in a microwave safe container and heat until warm, about 30 seconds.
- Add the peanut butter, soy sauce and red curry paste to the warm apple juice. Whisk to combine. Set aside.
- Thread the chicken strips on skewers. Sprinkle with Szechuan pepper salt.
- In a hot grill pan coated with cooking spray, cook the chicken skewers about 3 minutes per side or until cooked through.
- Serve the skewers with the sauce on the side.
