Chicken Satay with Peanut Dipping Sauce

Makes 4 servings

Chicken 0 WW Blue points / serving   Sauce 1 WW Blue point / Tbsp.


1 1/2 lbs. boneless, skinless chicken breasts, sliced into strips

1 tsp. Szechuan pepper salt or 3/4 tsp kosher salt and 1/4 tsp freshly ground black pepper

1/2 cup apple juice

1/4 cup peanut butter

2 Tbsp. soy sauce

2 tsp. red curry paste


  1. Put the apple juice in a microwave safe container and heat until warm, about 30 seconds.
  2. Add the peanut butter, soy sauce and red curry paste to the warm apple juice. Whisk to combine. Set aside.
  3. Thread the chicken strips on skewers. Sprinkle with Szechuan pepper salt.
  4. In a hot grill pan coated with cooking spray, cook the chicken skewers about 3 minutes per side or until cooked through.
  5. Serve the skewers with the sauce on the side.
