Gingery Bok Choy
adapted from Real Simple December 2009
Cooking Spray
1/4 cup soy sauce
1 Tbsp. grated fresh ginger
2 tsp sugar substitute
1 Tbsp. water
1 tsp. cornstarch
1 lb. bok choy, chopped or 6 small heads of baby bok choy
1 jalapeno, thinly sliced
In a small bowl mix together the soy sauce, ginger, sugar substitute, water and cornstarch.
In a pan coated with cooking spray, sauté the bok choy until just beginning of soften, about 2-3 minutes.
Add the soy sauce mixture and jalapeno. Cook until the mixture has thickened and the bok choy is tender, about 4 minutes.
