Pico de Gallo
adapted from Food Network
1 small onion, diced
1 jalapeno pepper diced
2 plum tomatoes, diced
1 fresh lime, juiced
1/4 tsp Kosher salt
1/8 tsp. freshly ground black pepper
- Combine all ingredients in a small bowl.
- All to sit for at least 30 minutes at room temperature for flavors to meld before serving.
