Dill Marinated Cauliflower

Dill Marinated Cauliflower

The longer the cauliflower marinades the better it tastes. Use as a side to a sandwich or to top a salad.

Makes 4 servings                                                                  1 WW pp / serving

3 cups cauliflower florets
1/4 cup olive oil
1/4 cup water
1/2 cup cider vinegar
1 Tbsp. dill, chopped
1/2 tsp. sugar substitute
1/2 tsp. garlic salt
1/2 tsp. Kosher salt
  1. Place cauliflower in a container with a cover.
  2. Whisk together the remaining ingredients and pour over the cauliflower.
  3. Cover and refrigerate at least 4 hours or longer if possible.
  4. Drain prior to serving.
