Cilantro Lime Rice

I made this rice to be served with the Tequila Lime Chicken. I wanted the lime flavor to carry through the dish.
Cooking spray
1/2 cup white rice
1/2 cup homemade chicken stock or canned
3/4 cup water
1 strip lime peel
1/4 tsp. Kosher salt
1/2 tsp. lime zest
1 Tbsp. lime juice
2 tsp. dried cilantro
1 scallion, green part only, chopped
- In a pot coated with cooking spray, toast the rice until golden, about 1 minute.
- Add the stock, water, lime peel, salt and cilantro and bring to a boil.
- Cover; reduce heat to simmer and cook until the liquid is absorbed, about 15 minutes.
- Let the rice stand for 5 minutes; stir in the lime zest and juice.
- Serve topped with scallions.
