Cauliflower Rice in the Style of Classic Mexican Rice
This is a low carb version of the classic Mexican white rice. All the flavor with no carbs.
Cooking spray
2 cups cauliflower rice
1/2 small onion, chopped
1 garlic cloves, minced
2 Tbsp. Homemade chicken stock or canned broth1 1/2 tsp. lime juice
1 1/2 Tbsp. chopped parsley
1 1/2 Tbsp. chopped parsley
Kosher salt and freshly ground black pepper
- In a skillet coated with cooking spray, cook the onion until translucent, about 4 minutes.
- Add the garlic and cook for an additional minute or until just fragrant but not browned.
- Add the cauliflower and broth to the pan and cook until the liquid is absorbed and the "rice" is to your desired tenderness, 2-5 minutes.
- Toss in the parsley and lime juice; season to taste with salt and pepper just before serving.
