Stir-Fried Broccoli Stems
adapted from Food Network
I am trying to use all parts of the vegetables that I buy. Many people only get the florets but buying the whole broccoli stalk is actually cheaper by the pound.
Cooking spray
3 broccoli stems, peeled and cut into thin slices
1 clove garlic, minced
1 inch ginger, chopped
2 Tbsp. soy sauce
1 Tbsp. fresh cilantro
- Bring a couple of inches of water to a boil in a saucepan and prepare a water bath.
- Place the broccoli in a steamer basket, place it in the pot and steam about 5 minutes or until al dente.
- Move the broccoli to the water bath. Cool completely.
- In a large skillet coated with cooking spray, cook the garlic and ginger until fragrant.
- Add the broccoli and soy sauce; cook until heated through.
- Sprinkle with cilantro before serving.
Enjoy!
