Roasted Winter Squash Seeds
I've been roasting pumpkin seeds for years and never really thought about other winter squash seeds until a few years ago. Spaghetti squash, acorn squash and butternut squash seeds all roast just as crisp and tasty as pumpkin. Now whenever I make a winter squash I save the seeds for a little treat later in the day.
Makes 1-4 servings depending on the size of your squash 0 WW Blue points/serving
Seeds from 1-2 Winter squashes
Cooking Spray
Favorite seasoning some of my favorites are garlic salt, jalapeno salt, BBQ seasoning, jerk seasoning
- Preheat the oven to 350F.
- Spread the seeds out on a pan that has been coated with cooking spray.
- Spray the tops of the seeds with cooking spray.
- Sprinkle with your preferred seasoning.
- Roast 10-15 minutes, stirring every 5 minutes to they are crispy and delicious.
