Parmesan Roasted Cauliflower

If you do no have access to a Gruyere - Swiss blend, use all gruyere.


Makes 2 servings                                                        3 WW Blue point / serving


1/3 head of cauliflower, broken into florets

Cooking spray

Kosher salt & Freshly ground black pepper

2 Tbsp. + 1 tsp. Parmesan cheese

2 Tbsp. + 1 tsp. Gruyere - Swiss blend shredded cheese


  1. Preheat the oven to 350F.
  2. Combine the cheeses in a small bowl and set aside.
  3. Spread the cauliflower out into a rimmed baking sheet coated with cooking spray.
  4. Spray the cauliflower with additional cooking spray.
  5. Season generously with salt and pepper.
  6. Bake for 30 minutes, tossing once, until the cauliflower begins to brown and is tender.
  7. Sprinkle with the cheese mixture and make for an additional 1-2 minutes or until the cheese melts.
  8. Re-season to taste with salt and pepper, if needed, before serving.
