Parmesan Roasted Cauliflower

If you do no have access to a Gruyere - Swiss blend, use all gruyere.
1/3 head of cauliflower, broken into florets
Cooking spray
Kosher salt & Freshly ground black pepper
2 Tbsp. + 1 tsp. Parmesan cheese
2 Tbsp. + 1 tsp. Gruyere - Swiss blend shredded cheese
- Preheat the oven to 350F.
- Combine the cheeses in a small bowl and set aside.
- Spread the cauliflower out into a rimmed baking sheet coated with cooking spray.
- Spray the cauliflower with additional cooking spray.
- Season generously with salt and pepper.
- Bake for 30 minutes, tossing once, until the cauliflower begins to brown and is tender.
- Sprinkle with the cheese mixture and make for an additional 1-2 minutes or until the cheese melts.
- Re-season to taste with salt and pepper, if needed, before serving.
