Lemon Parsley Cauliflower Rice

When I add lemon to rice I immediately this of the Mediterranean.
2 cups cauliflower rice, fresh or frozen & thawed
1/4 cup parsley, chopped
Juice of 1/2 small lemon
1 tsp. Penzeys Greek seasoning (optional)
Kosher salt & Freshly ground black pepper
- Add the cauliflower, parsley and Greek seasoning, if using to a sauté pan coated with cooking spray.
- Sauté until the vegetables are softened, about 4 minutes.
- Add the lemon juice and cook for an additional minute.
- Season to taste with salt and pepper before serving.
