Carrots Vichy
Adapted from Gourmet Magazine February 1999
According to Gourmet Magazine, many people in France cook these carrots these carrots in the pure water of Vichy. You can buy Vichy water online but for $5.50 for 1.8 ounces, I'll stick with my filtered tap.
1/2 lb. carrots, peeled and sliced on the diagonal 1/8 inch thick
1 Tbsp. Parkay cooking oil spray
2 Tbsp. water
1/2 tsp. fresh parsley, chopped
Kosher salt
Freshly ground black pepper
- In a small sauce pan, combine the Parkay, water and carrots.
- Cook covered over low heat stirring occasionally until tender-crisp about 10-15 minutes.
- Sprinkle with parsley.
- Season to taste with salt and pepper and serve.
