Asparagus with Tomato & Feta
adapted from Cooking Light March 2014
Asparagus get a kick from the zip if the balsamic and tomato while the feta adds some saltiness.
1/2 lb. asparagus, trimmed
1/2 cup chopped tomatoes
1 Tbsp. white balsamic vinegar
Kosher salt & Freshly ground black pepper
1 Tbsp. reduced fat feta cheese
- Combine the tomatoes with vinegar; season with salt and pepper and set aside.
- Bring a few inches of water to a boil in a wide pot.
- Steam the asparagus steamer basket until tender, about 5 minutes.
- Serve the asparagus topped with the tomatoes and feta.
