Skillet Poblano Corn

adapted from Weight Watchers' Five Ingredient 15 Minute Cookbook (2006)

The poblano pepper adds a mild spiciness to the corn.


Makes 3 servings                                                     0 WW Blue points / serving

Cooking spray

2/3 cup chopped poblano pepper

2 cups canned or frozen corn, thawed

Kosher salt & Freshly ground pepper


  1. In a skillet coated with cooking spray, sauté the poblano until tender, about 3 minutes.
  2. Add the corn and cook until heated through.
  3. Season to taste with salt and pepper.
