Giardiniera Salad

Giardiniera Salad

adapted from Food Network

This make a nice light side salad.

Many pickled vegetables have contain a high sugar content. Read your labels well or use your app.

Makes 2 servings                                          2 WW Blue points / serving

1/4 cup Mezzetta California Hot Mix Vegetables or your favorite 0 point giardiniera

1 Tbsp. brine from the pickled vegetables

2 cups torn lettuce or lettuce mix

6 basil leaves torn

2 Tbsp. reduced fat shredded mozzarella cheese

1 Tbsp. white wine vinegar

1/1/2 Tbsp. olive oil

1 1/2 Tbsp. water

  1. Kosher salt and freshly ground pepper
  2. Combine the California Mix, lettuce, basil and cheese in a bowl and toss.
  3. Combine the brine, vinegar, olive oil and water in a small bowl. Whisk to combine.
  4. Before serving, toss the salad with the lettuce and season to taste with salt and pepper.
