Caprese Zucchini

Caprese Zucchini

adapted from Cooking Light Annual Recipes 2015

Grilled zucchini topped with the making of a caprese salad makes a great side for grilled chicken, steak or pork.


Makes 2 servings                                                    2 WW Blue points / serving

1 zucchini, sliced into long planks

Cooking spray

1/4 cup diced, seeded tomato

1 Tbsp. chopped fresh basil

1 tsp. olive oil

1/2 tsp. red wine vinegar

1/8 tsp. kosher salt

1/8 tsp. freshly ground black pepper

1/2 ounce fresh mozzarella, cut into small cubes


  1. Preheat broiler.
  2. In a grill pan coated with cooking spray, cook the zucchini for 2 minutes on each side.
  3. Combine the tomato, basil, olive oil, vinegar, salt and pepper in a small bowl.
  4. Place the zucchini on a rimmed baling sheet. Top with tomato mixture and cheese.
  5. Broil for 2 minutes or until the cheese melts.
