Caprese Zucchini
adapted from Cooking Light Annual Recipes 2015
Grilled zucchini topped with the making of a caprese salad makes a great side for grilled chicken, steak or pork.
1 zucchini, sliced into long planks
Cooking spray
1/4 cup diced, seeded tomato
1 Tbsp. chopped fresh basil
1 tsp. olive oil
1/2 tsp. red wine vinegar
1/8 tsp. kosher salt
1/8 tsp. freshly ground black pepper
1/2 ounce fresh mozzarella, cut into small cubes
- Preheat broiler.
- In a grill pan coated with cooking spray, cook the zucchini for 2 minutes on each side.
- Combine the tomato, basil, olive oil, vinegar, salt and pepper in a small bowl.
- Place the zucchini on a rimmed baling sheet. Top with tomato mixture and cheese.
- Broil for 2 minutes or until the cheese melts.
