Tuscan Turkey Meatballs
adapted from The Spice & Tea Exchange
When we were in Savannah, GA, I visited The Spice & Tea Exchange and got to buy some of their wonderful spice blends. If you don't have the advantage of having the specific spice blends substitute what you have in your cabinet.
Makes 12 meatballs 0 WW Blue points / meatball
1 lb. ground turkey breast
1/2 cup shredded zucchini
1/4 cup shredded carrot
2 Tbsp. Tuscany Spice Blend or Italian seasoning
1 Tbsp. turmeric
1 tsp. dried basil
3 cloves garlic, minced
- Preheat the oven to 375F.
- Place the zucchini and carrot in a clean kitchen towel and wring out excess water.
- Mix the ground turkey breast, zucchini, carrot, seasoning blend, turmeric, basil and garlic in a large bowl.
- Form the mixture into 12 2-inch meatballs.
- Put the meatballs in the wells of a standard muffin pan, coated with cooking spray.
- Bake for 25-30 minutes or until cooked through.
- Serve with your favorite meatball sauce or try my Spicy Sweet Dipping Sauce.
