Garlic Beet Greens & Spinach

1 lbs. beet greens
1 lb. baby spinach
2 cloves garlic, thinly sliced
1 Tbsp. leek infused olive oil or plain olive oil
Cooking spray
- Trim the beet greens discarding the stems.
- Coat a skillet with cooking spray. Add the oil and the garlic and slightly browned. Remove the garlic.
- Add the greens and spinach to the same skillet. Cover and cook until wilted, about 4 minutes.
