Denver Omelet Waffle

3-4 eggs, beaten (depending on the size of your waffle iron)
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
1/4 cup fat free cheddar cheese
3 Tbsp + 1 1/2 tsp minced scallions, separated
2 Tbsp minced bell pepper
1 slice Canadian bacon, finely chopped
Cooking spray
2 grape tomatoes
1 1/2 tsp minced scallions
1/2 tsp minced fresh parsley
splash red wine vinegar
Kosher and freshly ground black pepper to taste
- Preheat a waffle iron.
- Beat the eggs, salt and pepper until well combined.
- Sir in the cheese, 3 Tbsp scallions, bell pepper and Canadian bacon.
- Spray the waffle iron with cooking spray. Pour the egg mixture into the waffle maker.
- Cook until browned and cooked through, about 2 minutes.
- Meanwhile, combine the tomato, 1 1/2 tsp scallions, parsley, vinegar and salt and pepper in a small bowl.
- Serve the waffle warm topped with the tomato mixture and your favorite egg condiments.
