Western Omelet Scrambled Eggs

 Western Omelet Scrambled Eggs

Serves 2                        0 WW Blue points


1/3 medium onion, chopped

1 mini bell pepper, chopped

Cooking spray

4 grape tomatoes, sliced

1 slice Canadian bacon, chopped

4 eggs

2 Tbsp skim milk

pinch cayenne

pinch salt

1 Tbsp parsley, minced

couple of dashed hot sauce

2 Tbsp shredded reduced fat Mexican blend cheese

  1. Cook the onion and bell pepper in a saute pan until the onion is soft. 
  2. Meanwhile whisk the egg, milk, cayenne and salt together.
  3. Add the tomatoes and Canadian bacon, cook a few more minutes.
  4. Add the eggs, hot sauce and parsley to the pan and cook to desired doneness.
  5. Fold in the shredded cheese and serve.
