Spicy Black Beans

Pork Chops with Mojo Sauce and Spicy Black Beans |
Cooking spray
1/2 small onion, diced
1 garlic clove, minced
1/2 tsp ground cumin
1/2 tsp kosher salt
1/8 tsp chipotle chile powder
1/8 tsp cayenne pepper
1/2 tsp dried cilantro
2 Tbsp diced jarred jalapenos
1 15 oz can black beans, drained
1/2 cup pork stock (or any stock you have on hand)
2 Tbsp reduced fat Mexican blend shredded cheese
- Coat a medium saucepan with cooking spray. Add the onion and cook until softened.
- Add the garlic, cumin, salt, chipotle powder, and cilantro and cook for another minute.
- Add the chopped jalapenos, black beans and stock.
- Continue cooking until the beans are softened and the sauce has thickened. Stor occasionally, about 5 minutes.
- Top with cheese.
