Pulled Turkey

Makes about 2 cups of pulled turkey 1 ounce = 1 WW Blue point
Cooking spray
1/3 large onion, sliced
1/4 cup chopped carrots
1/3 yellow bell pepper, chopped
2 cloves garlic, crushed
2/3 tsp cayenne pepper
1 tsp ground cumin
2 tsp paprika
1 tsp chili powder
1 tsp dried oregano
1/2 tsp ground black pepper
3 cups beef broth
2 large turkey wings, skin removed
- Coat a saucepan with cooking spray.
- Add the onion, carrot and pepper and cook until the vegetables are soft. about 2 minutes.
- Add the garlic, and spices and mix well. cook for another minute.
- Add the turkey wings, turning to make sure they are coated in the spices.
- Add the beef broth. If the wings are not covered by the liquid add a little more to make sure they are covered.
- Bring to a boil. Reduce to simmer and cook for about 2 hours until the meat is tender.
- Allow to cook and shred. Use as you would use pulled pork.
