Latin spiced, Soy-ginger and Curried Mayo marinated chicken |
adapted from Real Simple April 2013
1 1/2 tsp onion powder
1/4 cup reduced fat mayonnaise
1 Tbsp lemon juice
3/4 tsp curry powder
kosher salt and freshly ground black pepper to taste
2 boneless skinless chicken breasts, cut in half
Combine the marinade ingredients and which until well combined. Place chicken breasts and marinade in a resealable plastic bag and refrigerate overnight.
Grill the chicken breasts until the internal temperature reaches 165F.
Serve with your favorite BBQ sides.
