Chicken Andouille Succotash
adapted from Bon Appetit February 2002
The fava beans in the recipe can be replaced by lima beans to make a more traditional succotash. I chose favas because I had them in the freezer.
If you can't find chicken andouille, 3 ounces of turkey kielbasa can be used but the point value will increase to 1.
Cooking spray
2 Tbsp. minced onion
1/2 cup frozen fava beans, thawed and outer shell removed
2/3 cup frozen corn, thawed
1 chicken andouille sausage, chopped
Kosher salt & freshly ground black pepper
1 fresh tomato, chopped
2 tsp. fresh parsley chopped
2/3 tsp. lime juice
- In a pan coated with cooking spray, sauté the onion until soft, about 4 minutes.
- Add the beans, corn and sausage, season to taste with salt & pepper; Cook until the vegetables are softened, about 5 minutes.
- Add the tomatoes and cook about 2 more minutes.
- Mix in the parsley and lime juice.
- Season to taste with salt and pepper before serving.
