Mashed Butternut Squash with Caramelized Onions

Mashed Butternut Squash with Caramelized Onions served with Scallops Provençale |
1 1/2 lb. butternut squash, halved and seeded
Cooking spray
1 large onion, diced
1/4 tsp salt
1/2 tsp champagne vinegar
Freshly ground black pepper to taste
- Preheat the oven to 375F.
- On a baking sheet coated with cooking spray, place the squash flesh side down and roast until tender about 45 minutes.
- In a sauté pan coated with cooking spray, cook the onion over low heat until soft and sweet, about 10-15 minutes.
- Stir in the vinegar and pepper and cook until the vinegar evaporates.
- Scrape the flesh out of the butternut squash and add to the caramelized onions.
- Return the heat to low and mash. stirring to blend in the onions.
- Serve warm.
