 Roasted Asparagus with Lemon Zest

The lemon zest brightens the asparagus.


Serves 4                            0 WW Blue points/ serving


1 lb. fresh asparagus, remove the bottom 1- 1 1/2 inches

Cooking spray

1 small lemon zested

1/2 tsp kosher salt

1/4 tsp freshly grated nutmeg

Freshly ground black pepper to taste


  1. Preheat oven to 450F.
  2. Put the asparagus on a rimmed baking sheet coated with cooking spray.
  3. Coat the asparagus with cooking spray.
  4. Roast for about 5 minutes. Toss and roast for about 5 more minutes.
  5. Sprinkle with zest, salt, nutmeg and pepper to taste. Toss to evenly distribute and serve.
