Pork Medallions Asian Style

Pork Medallions Asian Style with California Blend Veggies |
Serves 2 3 Blue WW points
1/4 cup chicken broth
1 1/2 Tbsp soy sauce
1 1/2 tsp Truvia Brown Sugar Blend
1/2 Tbsp Hoisin sauce
1 garlic clove, minced
pinch of cayenne pepper
1 1/2 tsp sesame oil
1/2 lb pork tenderloin, cut into 1/2 inch slices
2 sliced scallions, green part only
- Combine chicken broth, soy sauce, Truvia brown sugar blend, Hoisin sauce, garlic, cayenne and sesame oil in a small bowl and whisk until combined. Add pork slices and marinate 4 hours to overnight.
- Bring the pork to room temperature. Remove the pork from the marinade and reserve the marinade.
- Heat a skillet coated with cooking spray over medium-high heat. Cook the pork until cooked through, about 3 minutes per side. Remove from skillet and keep warm.
- Pour the marinade into the skillet and bring to a boil, stirring until thickened, just a couple of minutes.
- Return the pork to the pan and heat through.
- Serve topped with sliced scallion greens.
