Poached Chicken Breasts
3 boneless, skinless chicken breasts
3 cups chicken stock
1 carrot
1/2 onion
1 celery stalk
few sprigs of parsley
- Put the stock, carrot, onion, celery and parsley in a large saucepan and bring to a boil.
- Add the chicken, return to a boil, cook for 5 minutes.
- Turn off heat, cover and let stand 10-20 minutes depending on the size of the chicken breasts.
- Remove the chicken and place in an ice bath until cool enough to handle
- Shred or chop and use in any cooked chicken recipe.
- Strain and reserve the broth for use in another recipe.
Note: Depending on how you are planning to use the chicken you can add other ingredients to stock such as lemon, jalapeno or other herbs.
