Poached Chicken Breasts

Poached Chicken Breasts

3 boneless, skinless chicken breasts

3 cups chicken stock

1 carrot

1/2 onion

1 celery stalk

few sprigs of parsley


  1. Put the stock, carrot, onion, celery and parsley in a large saucepan and bring to a boil.
  2. Add the chicken, return to a boil, cook for 5 minutes.
  3. Turn off heat, cover and let stand 10-20 minutes depending on the size of the chicken breasts.
  4. Remove the chicken and place in an ice bath until cool enough to handle
  5. Shred or chop and use in any cooked chicken recipe.
  6. Strain and reserve the broth for use in another recipe.


Note: Depending on how you are planning to use the chicken you can add other ingredients to stock such as lemon, jalapeno or other herbs.
