Bay ­Chile Chicken

How would you describe the flavor of bay leaves? When they are used in soups and stews the flavors just meld to the other herbs. According to Southern Living, when dried they have flavors similar to thyme and oregano.

Served with Cucumber Salad

Makes 2 servings

3 boneless, skinless chicken thighs

1 tsp. Bay Chile Salt

Cooking spray

1. Preheat the oven to 450.
2. Sprinkle the chicken with the Bay Chile Salt; Set aside.
3. Place a rack in a baking sheet; coat the rack with the cooking spray.
4. Place the chicken on the rack ; place in preheated oven for 20 minutes.
5. Flip the chicken and cook for an additional 10 minutes or until cooked through.
