Thanksgiving = Leftovers
I have plenty of things to do with leftover turkey, potatoes and vegetables but I have always been stumped by leftover stuffing. I adapted this recipe from on pul;ished in Every Day with Rachael Ray - November 2007
10 large white mushrooms, stems removed
1/2 cup leftover stuffing
1/2 Tbsp butter or margarine, cut into 10 pieces
1/2 cup leftover stuffing
1/2 Tbsp butter or margarine, cut into 10 pieces
1/2 cup finely grated Parmesan cheese
Cooking sprayPreheat the oven to 400°. Coat baking pan with cooking spray. Mound the stuffing into each mushroom. Top each mushroom with a piece of butter. Sprinkle cheese on top. Bake until the mushrooms are tender and the stuffing is heated through about 20 minutes.
