Chicken and Barley Salad - A Yummy Lunch with Leftovers

Chicken and Barley Salad
Serves 2
1/2 cup cooked barley
1 cup baby spinach
3/4 cup chicken, cooked & shredded
1/4 cup dried cranberries
1 Tbsp feta cheese, crumbled
1 Tbsp olive oil
1/2 Tbsp water
1 1/2 Tbsp fresh lemon juice
Salt and freshly ground pepper to taste

Combine barley, spinach, chicken, and dried cranberries in bowl. In another small bowl combine the olive oil, and lemon juice. Whisk until well combined; season with salt and pepper.Toss salad with dressing just prior to serving.
