Quick Dinner After a Long Weekend

Back from a weekend of fun in Newburyport. We needed a quick and easy dinner.
Voodoo Pasta with Smoked Sausage
Serves: 3
8 oz. uncooked pasta- fettuccine would be best but I used spaghetti because it was open
1/2 tsp. blackening seasoning
1 1/2 tsp. hot sauce
2 Tbsp parsley, chopped
8 oz smoked sausage, cut into 1/4-inch slices (I used 4 oz chicken andouille and 4 oz turkey kielbasa)
1/2 (16-oz.) jar alfredo sauce (Classico Creamy Alfredo or your favorite)
1 small tomato , chopped
Cook pasta according to package directions. Return pasta to pot. Meanwhile, sprinkle smoked sausage with blackening seasoning; place in skillet over medium heat and cook until lightly browned, about 5 minutes. Stir in alfredo sauce, hot sauce, and parsley and heat through. Pour over pasta and toss until well coated. Serve topped with chopped tomato.
