Basic Potato Salad

Sometimes the best way to cook is to just keep it simple. You can not get much more simple than this recipe.
3/4 lb. yellow potatoes, scrubbed and cut into ¾-inch cubes
4 tsp, sherry or white wine vinegar
1 scallion, white part minced, green part thinly sliced
Kosher salt and freshly ground black pepper
1/4 cup reduced fat mayonnaise
- Set a steamer basket in a large pot with a lid and add enough water to come just below basket; Bring to a boil.
- Place potatoes in basket, cover pot, and reduce heat to a gentle simmer.
- Steam the potatoes, until tender, about 15 minutes.
- Meanwhile, in a medium bowl, combine mayonnaise vinegar, scallion whites, and salt and pepper to taste.
- Add the potatoes to the vinegar mixture and toss gently to combine.
- Cool to room temperature, about 1 hour or chill until ready to serve.
- Garnish with scallion greens before serving.
