Homemade Shrimp Stock
There is nothing like homemade stocks. Whenever I cook with shrimp I put the shells in the freezer so I can make my own stock. Why pay for something if you can make it from what you would be throwing away.
Shells from about 3 lbs. of shrimp
1/2 onion, halved
1/2 stalk of celery, chopped
1 small carrot. chopped
1 tsp kosher salt
1 tsp green peppercorns
1 1/2 tsp Old Bay Seasoning
7 cups of water
- Combine all ingredients in a stockpot.
- Bring the mixture to a boil, simmer until reduced to 6 cups, about 20 minutes. Strain and use.
